Ingredients:
Popcorn:
1 tbsp flavourless oil
pinch of sea salt
40g (1.5oz/quarter cup) popcorn maize kernels
Salted Butterscotch Sauce:
30g (1oz) unsalted butter, diced
160ml (5 1/4 fl oz) double (heavy) cream
145 g (5oz/ 3/4 cup) muscovado sugar
generous pinch of sea salt
Cheesecake:
200g (7oz) digestive biscuits
small handful of popcorn
pinch of sea salt
100g (3.5oz) butter, melted plus extra for greasing
500g (1lb 2oz/2 cups) mascarpone or soft cheese
100g (3.5oz/ 1/3 cup) quark or thick natural yoghurt
80g (3oz) icing (confectioners) sugar plus extra to taste
100ml (3.5 fl oz) double (heavy) cream
