IT'S ICE CREAM SEASON 🍦🧡 and not just any ice cream season - Salted Caramel Toffee Fudge season - hell yeah 😎. Silky salted caramel ice cream rippled with a caramel sauce and studded with fudge pieces - this is the dreamiest ice cream you'll make this year. Eat it in a waffle cone or in a bowl with extra sauce and you've got yourselves an absolute TREAT!
We made this using an ice cream machine, you can also make it without one, Jemma explains all in the video!

SALTED CARAMEL CUSTARD
135g Caster Sugar
150g Double Cream
600ml Milk
1.5 tsp Vanilla
1 tsp Salt
5 Egg Yolks
50g Caster Sugar
SOUR CREAM CARAMEL
90g Sour Cream
½ tsp Vanilla
90g Caster Sugar
40g Water

Lovely video! Question from an amateur here: what can I do if my caramel becomes hard while I incorporate the double cream? Do I have to heat it again or is it ruined?

Low heat while stirring to warm the sugar back up will allow it to mix with the cream. Also, if you heat your cream first (just warm not boiling) it's less likely to shock your caramel into hardening

Jem! The 50g caster sugar mentioned after the eggs isn't in the video. Do you add that before you pour the caramel into the eggs, or after you pour the eggs back into the caramel? Thanks!

I think we’re showing our age by admitting we know who Gino Ginelli was! (And I don’t think he was a real person, he was invented by Walls to make their ice cream sound more posh!)
