@@rjyeezy76 Skirt steak where I live is 15 bucks a pound, hardly "cheap". Back in the day it was thrown in with the hamburger cuts. Food Network made every formerly cheap food popular, and now things only butchers and cooks use to know about are too expensive for us peons.

This looks awesome. I'm totally making this next week. It reminds me a of what we call "steak tips" here in New England. We marinate chucks of sirloin or flank (I prefer flank) and grill them. Every restaurant or home cook has their favorite marinade. I like to do mine in a combination of soy sauce, a sweet BBQ sauce and Italian dressing. It sounds nuts, but it's so good. The sugar in the BBQ sauce caramelizes a bit on the outside and the acid from the dressing makes them so tender.

That looks pretty good Sam, thanks. I will definitely try this out like this week. I have one suggestion for choosing the tenderloin steaks that you buy, I have been a meat cutter for like 35 years now. I noticed the tenderloin steaks you used were cut from the butt end of the tenderloin, you should select tenderloins from the center part of the tenderloin or ask your butcher to cut them from the center if you’re not sure. The reason being is that the butt end Of the tenderloin has more fat that curves into the meat in a couple different places and it’s hard for the budget to remove without losing half the value of the steak. they still need to make their money. The center cut is clean or has less fat or no fat around the edge or easily you can cut it off with a halfway decent knife. And the cost is the same. Yep. Center-cut, tail, or I'd just as soon use sirloin. I don't even consider the head as part of the tenderloin. Totally different muscle structure, texture and taste.

I bought a potato ricer after watching one of the videos last year and it's the only way I do mash potatoes now!! My family loves when I add cheese.

Same here. I saw a video last year and decided to get one. It's the only way I make mashed potatoes now as well. I found one in perfect condition at a thrift store. I actually see these pop up at thrift stores fairly often. The model I got sells for $32 on Amazon. I got it for $2.

Sam, the way you super enjoy your bite of food when you’ve finished cooking is awesome. BUT what you did on this video with throwing the spoon over your shoulder should be something you do more often. I sooo laughed and enjoyed that!

I love doing Steak Bites every once in a while when I want some beef, but not necessarily a steak. I also typically use Top Sirloin since it's generally affordable, it's low fat (but you're fixing that with the butter), and very tender. My only annoyance with it is that it needs a good bit of cleanup to remove silverskin, because no one wants to eat that. The only other thing I would add to what Sam has done is including some smoky paprika. It's subtle, but it's a nice little touch on the steak bites.

Vietnamese been doing steaks this way for ages and it's called bò lúc lắc, loosely translated as "shaken beef"

I love the steak cooked this way. I have not tyres to make it my self yet. Think I will go steak shopping in the morning. They make it at the Asian grill where they cook it in front of you. But Sam yours looks a lot better !!👏😀

@@ChrisM243 Lettuce, tomatoes, onions, and peppers are generally used, onions and peppers sometimes mixed while cooking the beef, and sometimes garnished, but lettuce and tomatoes are strictly on the side

I’ve been watching your marvelous videos for a few months now, and they are stellar. But there seems to be a moment or two in just about every one when you burn yourself a little. Just a tad, as you might say. And you say, “Ow, that’s hot.” These moments are a personal favorite. I know that’s wrong of me, and I’m working on it. But they continue to delight. Rosemary and thyme always takes me back to my Queen Street West days. I guess that was the first time I really got excited about cooking. Toronto was also a cornucopia for ethnic food, as you well know. Memories... *sigh*

The potato ricer is mostly used to keep the potato starch crystals from popping/activating and making the mashed potatoes gummy. Highly recommend buying one if you like deliciously perfect mashed potatoes.

About your flipping the steaks constantly. I've seen you do this for years and have been doing it your way for years. America's Test Kitchen came out with this method this year. Copy Cats IMO, even though I love the show. I only recently found your KZfaq channel and have been binging. I used to watch you on a cooking show where you would walk around the set, which I think was your house, and talk to camera guys, dogs, etc... I LOVED that show and am so excited about this channel. Last, your sausage pasta recipe is eerily similar to Guy Fieri's Cajun Chicken Pasta that won him Next Food Network Star, yours predates his by a couple of years as far as I can tell. Keep cussing and cooking and I'll keep watching, laughing and cooking your recipes.

Finally made this tonight. Had some cauliflower that needed to be cooked before it was too late so subbed cauliflower mash for the potatoes. It was freakin delicious! I love how your recipes are always quick and easy but end up tasting like they took a lot more effort.

Video idea: multi appliance thanksgiving dinner. Putting all tools to use to finish late thanksgiving meal all at once. Some things I’ve done to accomplish this: sous vide turkey breast; instant pot mashed potatoes; ham roasting on grill, multiple casserole in oven. Etc.

Wow, this looks amazing. During the first beauty shots in the video of the steak and gravy- I thought that was made of something far more complicated than that butter mixture and the meat juices! Another easy delicious dish for me to cook!

Been a Fan for a few yrs now, tried a number of your creations. Being a "Meat & Tator's" guy, THIS is by far the Best to me. Made it last night and it was Great !!!! Never make mashed Tator's the Ol' Fashioned way again now either !

I did steak bites for a party with a couple of thick ribeyes and they were amazing, just with the garlic butter, and I had a couple of simple sauces for dipping on hand. I do like the idea of putting them over some creamy mashed potatoes with roasted garlic and horseradish… nicely done Sam!

I made this tonight (3/14/22). HOME RUN! Only difference was with beef prices being so high, I bought a cheap ass cut of meat and marinated it for 36 hours. (Can't remember the cut.) Tender, juicy and oh so good! Thank you, Sam! I took no credit because I'm stupid like that!

STCH cast iron pan has the features I look for. A hole in the handle's end to hang it up with, plus the handle has a perfect contour to hold onto while you pour out the contents thru either side with your hot pad on one hand and hot mitten on the other hand

Those potatoes look good, but let me share my secret. 24 years ago this week my husband and I were honeymooning across Florida. We went to a restaurant called Race Rock-- like Hard Rock Cafe but for motor sports. They had incredible mashed potatoes. Add roasted garlic before mashing with the cream and butter, and green onions and bacon after mashing. They are loved by everyone!
