I'm South Indian and I'd just like to add some info: If you're going to cook jackfruit, use a raw or semi-ripe fruit for a better result. It'll take longer to cook because the pods are thicker, but since you're not starting out with the sweetness of the ripe pod it will absorb the spices better. (Add a little bit of honey if you really need the sweet taste). The ripe version you can eat as is, or it can be made into desserts like ice cream and such. The long thin strands you see around the pods (2:23) are also edible; they are especially suited to this type of cooking. Even in the ripe fruits they do not get too sweet - and they cook faster since they are thinner and smaller. Try those the next time! The seeds are some of most nutritious things found in nature. They don't taste much like anything but contain just about every nutrient under the sky that we need and are also rich in fiber and antioxidants. Do NOT eat them raw under any circumstance; dry-roast them in cast iron for best results. You should do an updated vid with a semi-ripe version (it's perfect for cooking when the pods are ju-u-u-ust starting to turn colour from white to gold).

You answered my question, mostly. I want to know how this fruit is if you don't make "meat" from it. Sweet? Like a melon? Pinneapple?
@gunnersubbu
@gunnersubbu 2 жыл бұрын
@@AlvaSudden Ripe jackfruit is sweet - in fact, It's sweeter and more delicious than most desserts you can think of. Its texture and flavor are unique; I find myself unable to compare it to any other fruit. It will also stay fresh in the refrigerator for 4-6 days (but it WILL vanish overnight if you have kids). Raw jackfruit has a bland taste, but it contains a lot of starch (that has not been converted to sugar yet) so it can be used to make chips and other crispy foods; this is why it works better for cooking. Also since the ripe version is rich in natural sugars it can increase your blood sugar, so it is not recommended for diabetics - another reason why the raw version is preferred for cooking. If you're wondering how to tell the difference: just smell the fruit. Ripe jackfruit will have a very sweet smell.

Hi Gwise thanks so much for taking the time to share all of this information. I am just wanting to be clear about something. When you are saying raw (which to me means uncooked) do you mean uncooked? Or are you using this term to mean unripe... (which to me means picked before the conversion of starch to sugars and not quite "ready to pick" as it is still able to stay on the tree)? To me it seems you are using "raw" the way I would use "unripe" but I want to understand you clearly as I loved what you shared. Thanks!!!

@@julianarodrigues1904 That's true! I was about to say that. One can also use that fiber part to make something that resembles chicken (me & my family had a "chicken" pie quite a few times; 'tis great!). The fruit need to be green/raw, though. But, concerning the video, it's interesting that that the pods can also be used to mimic pork. We haven't tried that.

I am fairly sure he was trying to say 'Worcestershire' not ' Worcester', Worcester is the region in England that Worcestershire Sauce (Lea & Perrins the original) is made. Only locals and people from the UK and Australia call it 'Worcester Sauce' (pronounced - 'wu· stuh') for short. I have never heard an American use the term "Pass the Worcester sauce". I really think you did that wrong. For this recipe you don’t want a ripe jackfruit. You want a young one. A ripe jackfruit brings too much sweetness and fruitiness. Also, you don’t want to throw away those fibers. That’s a huge waste. The fibers are the best part and give the real texture of pulled pork. You can even use the core. Honestly, the fruit pods bring the least to the table. It’s all about the surrounding fibers. They even look like pork when raw. And add tamari sauce, liquid smoke, and nutritional yeast for depth.

Also, in the North of England we have something similar called Henderson's Relish which is totally vegan - also (speaking as a Northerner) superior to Worcestershire sauce 😜

I have had curry jackfruit and it was delicious. Tasted like boneless curry chicken. It wasn’t a fully matured Jackfruit I guess so it wouldn’t be sweet. Shout out to Abidon in Jamaica he made it for me.

I would like to know how firm it is after it has cooked, I normally try and cook meat so that it will pull apart with just a fork. Does the Jackfruit have the same type of consistency. Its a good question for people with digestive issues.

Ive been using jackfruit for a while now. I will admit, I was skeptical at first until I tried it. Hands down the best substitute for pulled pork or jerked chicken recipes. Unless you are feeding food critics they will never know the difference. Great video! Thanks.

I remembered the fruit Jackfruit has very strong smelly than durian. I did ate raw of jackfruit is taste like “cold custard” also does same of durian. I heard that jackfruit could converted to mock pork by cooking it with spices and sauce. I would like try “mock pork” for one day.

@@SauceStache correction: it was discovered much sooner but not commonly imported until much after the release of the gum. It's believed to be based on a chemical called isoamyl acetate which is a common byproduct of whiskey distillery.

Here in the Philippines, there is a variety of fruit we call Marang which is like the cross between Durian and Jackfruit. It is also smelly and taste a bit like durian but the peal is similar to jackfruit.

You do this with organic (Tesco) banana peel: chop into fine bits, grill with whatever, I like firey palm oil, & stir in yeast (Marmite or Vegemite). If you want a good kick; dry fry it in with good old Scottish haggis (Tesco), onion & mushrooms. Don't forget to drop a dash of whisky in. Enjoy with you favourite pint😉
