I've been watching loads and loads of chef or chefs like on you tube and this guy simply wins over all of them. He is the only one who can explain properly and keep a recipe just a few minutes long. Add to that his humor sense and down on earth character and you've got a teacher. And then he's got mustache, like me. No I am not in love with him!

I made these! I went to two grocery stores, Target, and Walmart to find a mortal and pestle and ended up grinding up the fennel in a metal bowl with a plastic wrapped hammer...it took a bit and I hurt my hand but these came out feaking fantastic, totally worth it! Yeah yeah, I know, Bed, Bath and Beyond was just a little too out of the way than I wanted to go that day :) Besides, if I had thought clearly, I would've remembered that the Asian market has them which is down the streetish.

I made these last night using a little less sugar and they came out quite well! I am going to make the glaze again adding minced garlic and use it as a wing sauce! Thank You Chef John!

I used this recipe on St Louisville cut ribs on the smoker. Apple wood Finished them in the oven. Superb.

Made these today but on the smoker using spare ribs instead of the babybacks , then finished them off in the oven w the glaze wow they were amazing !

Holy cow, I made these on yesterday, and they were amazing. I grilled the ribs (ribs don't belong in the oven). I left out the garlic salt, b/c that's just the way I roll. It can't be said enough - this recipe is amazing....

This is one of my go to rib recipe, made it many times But tonight for SB 54 I used. chicken wings instead of ribs, cooked them on my weber the same way I do the ribs except less cook time of course, everyone raved at the flavor of the wings. Thanks Chef John

I've had rave reviews for my Memphis style baby backs. I will be trying this, but I'm going to do them on my smoker with hickory; I'll put them on a rack and finish in the smoker for the final glaze. This sounds outstanding.

I am glad to see that I am not the only one to use a silpat for meat; it works great lined on a rack for roasting turkey, making it easy to flip the bird halfway thru cooking time.

I made this tonight. Used white wine vinegar in place of rice vinegar for the glaze, and leaved the fennel seeds whole. It was delicious.

John, this is what I've been doing. Saving all my bones, chicken, rib...etc, and saving them for stock. Great healing powers in bones. Bones of all kind, maybe not mix and match. You get the gist. Great broth for old peoples bones. literally : )

Awesome recipe Chef John.....just curious as to why you wouldnt peel the membrane off of the backside of the ribs. It only takes a few extra seconds and if left on can sometimes give an unpleasant mouth feel.

I am in trouble ( not that kind) I did the pork and mushrooms and twice baked potatoes for one group then the Sausage ribs with cottage fries and garlicy green beans for another, now I have folks asking me when am I going to cook again.
