1:32 Preparing the sauce
2:07 Baking
2:35 Garnish and conclusion
Ingredients:
For the Meatballs
1 pound lean ground beef
1⁄2 cup long grain rice
3 cloves chopped garlic
1⁄2 small chopped onion
1⁄2 cup water
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
Making the Sauce
15 ounces tomato sauce
1 cup water
2 tablespoons Worcestershire sauce
2 tablespoons sugar
2 tablespoons chopped parsley for garnish
Additional Notes:
Feel free to customize the seasonings in the meatball mixture according to your taste preferences. You can add herbs like parsley, oregano, or basil for extra flavor.
For a healthier twist, you can use lean ground turkey or chicken instead of beef.
To ensure the meatballs hold their shape while cooking, it's essential to thoroughly mix the meat mixture and allow it to rest for a few minutes before shaping them.
If you prefer a spicier tomato sauce, you can add a pinch of red pepper flakes or a dash of hot sauce to give it a kick.
Serve the Penny Pincher Porcupine Meatballs over cooked pasta, rice, or with a side of crusty bread for a complete and satisfying meal.
This recipe is perfect for meal prep or batch cooking. You can make a large batch of meatballs and freeze them for later use. Just thaw them in the refrigerator overnight before reheating.
Feel free to garnish the dish with grated Parmesan cheese and fresh herbs for an extra touch of flavor and presentation.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the microwave or on the stovetop for a quick and delicious meal.
Don't be afraid to experiment with different ingredients or add vegetables like bell peppers or spinach to the sauce for added nutrition and flavor.
Enjoy these Penny Pincher Porcupine Meatballs in Rich Tomato Sauce as a comforting and budget-friendly meal that will surely become a family favorite!

Oh my goodness, my Mom would make this all the time. She was from the depression era. I think she used tomato soup and served it with fusilli pasta, We loved it as kids . Yes we did call them porcupines. 🍽

Yes, it’s an old recipe. Love old recipes. Something about them. You can use soup, I just find the water and tomato sauce cheaper.

Made this recipe today. Kids and husband approved. Served it with mashed potatoes and salad. Enjoyed having leftovers. Great way to stretch one pound of ground beef. Used two pounds yesterday to make burgers and only had one little patty leftover versus 10 mestballs leftover! 😳

Dave, very nice recipe, I've never heard of that dish/recipe nor have I eaten them, but yes on us & the girls as we like meatballs. You will like this,since I have never heard of this dish & being from Kentucky, I thought you were going to make the meatballs out of porcupine meat, lol , seriously, because we eat a lot of things that city folks don't eat , I've probably eaten every meat here except we do not eat skunks( a given) birds of prey ie: hawks, owls , falcons, or scavenger birds like buzzards etc...keep your stick on the ice pal
@TheCooknShare
@TheCooknShare Жыл бұрын
Hey Steve. Actually, I never thought of people thinking that. That might be the case though. Good point. I know different wild meats are eaten. I've had bear and beaver, rabbit, etc. But I've never had porcupine. Maybe at the lodge. LOL. Us country boys forget things like that. See you at the next meeting.
@stevelogan5475
@stevelogan5475 Жыл бұрын
@TheCooknShare Dave, I agree, & I have had all the meat you just mentioned. Odd fact, the best marinade for black bear is coke cola, that brand only as it tenderizes the meat & adds a little sweetness, & bear meat is already a little sweet, 24 hr marinade on that, see you at the lodge pal
@TheCooknShare
@TheCooknShare Жыл бұрын
I agree, Steve. Coke is best. It does really break down the meat. Let's try this at the lodge.
