500g Greek Yoghurt, Full Fat (see notes)
1/2 Lebanese cucumber, peeled
1/4 cup olive oil (see notes)
2 garlic cloves, minced
1 tsp fresh mint, finely chopped
1 tsp salt
Instructions:
Tzatziki Dip
Let’s begin with the yoghurt. If you want more information on what type to use, see the notes below. Place a cheese cloth, otherwise known as a muslin cloth over a sieve. Pour the yoghurt into it and tie a tight knot at the top. Place over a large bowl and place it in the fridge overnight or 24 hours. The longer you let it strain, the thicker your dip will be. Once it’s finished straining, discard the water from the yoghurt and place the strained yoghurt into a medium sized mixing bowl.
Grate the cucumber and place in the cheese cloth. Squeeze it hard to get rid of any of the water from the cucumber. There’s a lot and not straining it will make your strained yoghurt watery again.
Add the strained cucumber in the yoghurt along with the minced garlic, salt, olive oil and chopped mint. Mix until well combined.
To serve, place in your nicest bowl, create a swirl with a spoon and drizzle with some olive oil. Place a black olive in the centre.
Notes
Storage
Dip can be stored in an airtight container for up to 2 weeks.
Greek Yoghurt
Make sure you use full fat yoghurt for this recipe. Using low fat yoghurt is pointless because it’s mostly made up of water and we’re draining it. It’ll just result in less yoghurt and more wastage.
Olive Oil
Make sure you’re using really good quality olive oil here because it really makes a difference. You could use the light extra virgin kind, but I find the full flavoured dark one adds more flavour.

Roast a whole garlic or 6 😅 in the oven, refrigerate, then just squeeze the garlic out of the clove. No chopping or garlic hands! It's smooth a little bit smokey. Just perfect for tzatziki! I use mint as in the recipe, but, you can substitute it with Dill. Can add half a lemon juice or a tsp of vinegar as well! Oh! And please use full fat Greek yoghurt! Thicker, tastier, better consistency. Nom nom! 🎉

Great suggestions. I do similar things with my homemade tzatziki. Big fan of the smokey garlic, white wine vinegar, and classic dill taste. Full fat Greek yogurt makes a big difference compared to nonfat.

I have deseeded and grated the cucumbers and have them resting in a bowl with a pinch of salt and then will strain the water out. I'm making your recipe because I love the mint. Everything after straining is your recipe. Magnificent recipe. When I was growing up my mom made this and served it as a dip. She would add a couple of finely diced green onions and serve a toasted muffulotta bread that had been spread with garlic butter and grated parmesan cheese and toasted in the oven. Cut apart to make a upper and lower disc and cut in pie wedges. This sauce is so versatile. Thank you!

Straining the yogurt is the most important step. I have a reusable coffee filter for my coffee maker so I pull it out, add a paper filter, put it in a bow w/a lid, add a cup of Greek yogurt, put the lid on and put it back in my fridge for a day. I save the cheesecloth for squeezing the water out of the cucumbers.

I like mints as candies, even a leaf or 2 in lemonade or tea. But NON whatsoever in chocolate nor in savory foods ! I think mixing mint with chocolate is a desecration of chocolate 🍫 But it is merely my opinion as taste or flavour are no matter for argument, it is only a matter of one's preference...

Yesterday in the Greek house I had the opportunity to try it. When I mentioned that I would try it with dill, I was instructed that dill can kill the aroma of a cucumber! That's why I'm going to do with mint!

I'd remove mint, ad vinegar or lemon and some dill and it's perfect! I also think the strain of the yogurt and the cucumber is right! Even in Greece not everybody does that as they should!

I'm 70 years old and Greek "all my life". For an authentic Greek tzatziki and the distinctive taste, you need fresh dill and white wine vinegar. Can substitute with lemon juice. Also, buy a good quality Greek style-stained yogurt like "Fage" and ditch the overnight straining. Besides that, it's okay.

That is NOT greek yogurt. It is also written on front, greek style, whatever that means. Greek yogurt is much MUCH thicker.
