I've been searching for ingredients/recipe since I went to Shanghai just over a year ago and ate this dish A LOT. So far this is what I think for ingredients, and cook as per video: - Rice/egg noodles - Pork sausage (or pieces) - Egg - Boc choy - Bean sprouts - Diced pickled green beans - Diced red onion - Diced spring onion (aka shallots, green onion) - Diced chilli * Oyster OR sweet soy sauce (or maybe even regular soy sauce. When we asked, we were told oyster sauce, but our Chinese friend wasn't 100% familiar with the Shanghai dialect) * Sugar * White pepper * MSG (I'm fairly sure at least one of those powders is just MSG) Items marked with * mean I'm not sure if they're right. Please comment if you have a better idea of exactly what is in this dish.

+Thomas Comley Shallots are not the same as Green Onions. I would use Baby Bok Choy for a better dish. I think that using pork tenderloin pieces that was marinated first would be best. Oyster sauce and soy used together is great used in this dish. Always a dash of MSG and pepper to taste. However, if sensitive to MSG, omit. A touch of sugar might be okay, but I am not sure it is needed.

+Thomas Comley MSG looks like fiberglass, at least that's the form in have seen it in Chinese kitchens in the US. I guess it could be ground up into a powder though.

***** lol, it's in China for sure... I shot the video there years ago. Has always surprised me that an Indian song playing on a stereo on the streets of Shanghai would make so many ppl doubt the provenance of this video! Globalization of mass media is real ; )

I really enjoy this kind of cooking. Simple, unpretentious, inexpensive, informal, filling and PACKED with flavors! And it is so easy to recreate right in your own kitchen or on your back deck using a portable propane gas burner along with your favorite wok or giant discada. Sweet, simple PERFECTION. YUM!

Here in Beijing, they have these road dances/exercises that people indulge in every evening.Some of the songs they use are Indian , and i guess from other countries as well.Reckon the video was shot around evening time.

They had noodle vendors in NYC Chinatown and that was the best meal I've ever had also...been trolling for that recipe for ages. now. lol Thanks for posting this. They removed all the food vendors from the lil triangle where they did business a while now. Miss them

So if I posted a video from the US and there was a Spanish song going in the background then there is no way that I am in the US? I could film a video of a sushi bar a few miles from here and you would hear music from India in the background. Does any of that tell you in what country I am in? In the same area as the sushi joint is an Italian place. I could film myself eating authentic Italian with the same India music in the background. Would you then still deny that I am not where I say I am? Its just music and that does not mean that you are in the country of the music's origin.

Pretty hip song for a Shanghai street vendor... and love how he uses a big steel ladle to cook dry noodles. Might as well use a fork to cook rice. But I bet he could do it too.

There are chinese writings on the sauce bottles. You can find these noodle stands a lot outside of colleges and universities and they typically come out after dark to cater the hungry college kids. I can't say how healthy and how clean they are. But they taste so good!

krisspykrapper The noodles is cooked for several portion. Also he doesn't put any MSG, all I can see is oil, a spoon of soy sauce, a spoon of ground white pepper, and splash of ground black pepper. I can't see any MSG (which is whiter than salt). Only Chinese takeaway in the Western World use MSG in their Cooking. The Chinese hate it.

From my experiences, powdered chili is usually used for marinating things. For everything else, it's usually just whole or crushed chilis. Whole spices are most commonly used, but when that's inconvenient powdered spices are used, e.g. cumin tends to fall of lamb kebabs and the flavour of star anise, cloves, etc only come out in stewing.

why asian and indian all so unhygenic, no foreiners will buy food because scared they will get sick or die! their goverments should enforce hygiene and make them do safe food handling courses! how can carts and small stalls properly wash bowls etc!

If I were to hazard a guess, the spoonful of powder was probably an MSG mix. Chinese cooking usually uses sauces, cooking wines and stuff like preserved beancurd or whatnot. Not big on using powdered flavourings, Chinese cuisine. I might be wrong, though.

you normally get sick from foods you're not used to in other countries... but the more you eat it, your stomach gets used to it and you don't get sick. I studied abroad in china for 4 months and was only sick for the first couple of weeks but was fine after that. The food is absolutely amazing though, so I definitely recommend you try it if you get the chance!

The wok is designed to allow the fire to burn off the excess oil when you flip the food in it. You see this at 20-25 secs. This is known as the dragon's breath and adds a smoky flavor and is an essential wok skill. If you ate food cooked by someone with no wok skill but who followed the recipe then yes, it would be very oily. Good wok skills make a huge huge huge huge huge huge huge difference. I think that's enough "huges" to get my point across. :)

As Chinese, we rarely use garlic powder (we would just use the real garlic to do the job), and especially street food I'm not even sure the owner want to invest that much, I think again as Chinese to this traditional cooking it's either spice powder or chicken stock powder

there was a fiasco back then when some cooks would use oil that were taken from trash. i lived in shanghai before and the street fried rice and noodles were amazing so... jokes on them!

I'm not so hot on MSG myself, and I agree with you that with proper ingredients and skill MSG-free food could be amazing. Food peddlers like these, and even some housewives, though, aren't always so skilled. They use MSG to make up for any lack, or just to stand out above their competitors. Some people just fell for the advertising. Some entire swaths of Asia just love Ajinomoto, which is a brand of MSG. My mom used to use it as I grew up. Used to east MSG raw... it was delish! But no more

Great looking Shanghai noodles. But what I found insanely funny was the song in the background where this Indian chick(read Alisha Chinoy) was belting the song, 'Made in India'. Lol :D
