This recipe was amazing. The sauce picked up a great smoky flavor (I used an offset smoker) that wasnt overly powerful. I made it for a potluck and left the noodles slightly under-cooked so they wouldn't turn to mush in the crockpot while staying warm.

Melt the cheese on the stove and mix it with the macaroni and then put it on the smoker. It absorbs more smoke flavor this way and doesn't burn up 2 hours of pellets for very little smoke flavor

I've been making macaroni and cheese for years with four types of cheeses but this year when I cook for myself for Thanksgiving I tried Gouda along with the two other cheeses that I use and that was it. From now on I will be using Gouda Gouda with my two other cheeses. That Gouda definitely gave a whole different flavor. Soooo bomb🔥🔥😋😋

I like Gouda, Colby Jack, sharp and mild cheddar. Sometimes I will do white cheddar in place of sharp cheddar as well.
