I agree, and he always does leave a lot behind when I watch him on PBS. It's not just a sin to waste food that so many people worked so hard to get to market, but it can also make a recipe inaccurate. I call his rushed method that leaves so much behind, the "Mad Max" method. It always bothers me, and I see some other cooks waste just as much on PBS cooking shows. I've never seen waste on Julia Child's shows.

This is fantastic and good information, but I have to say what I love most about it is Mr. Ming's voice... He has one of those soothing, relaxing voices and deliveries where it almost doesn't matter what he's saying, it's just nice to listen to. I put his voice in my top three of Bob Ross, Wilfred Bremely, and now Chef Ming!

40 mins?What I do it is,3 tablespoons of oil in a rice pan,add chopped garlic,mix till it browns.Then add 3 cups of rice and turn rice w/ wood spoon for 5 minutes(heat on medium high/scale from 1-10 it would be on #5)add 4 1/2 cups of water.Put heat on #7,wait for boil,when water boils,turn rice 30 sec's to loose rice at the bottom,cover pan,wait 3 minutes.Then put heat on low(#1) for about 10-15 min or till u see rice is puffy & all water evaporated,lift lid,turn rice again.Cover,shut off

I did exactly what this video told me long before I knew how to properly wash rice like my parents way. Except I wash the rice a fifth time just to be extra clean when it come to extracting as much starch as possible from the rice itself.

Same! Well I canceled cable and switched to streaming cable (Philo). Literally saving thousand$. You may be able to get PBS, ABC, CBS, NBC, etc. if u buy a good digital antenna. You can also watch Simply Ming for free on the Tubi app if u hv a smart tv or Roku. 😃

If you have an automatic pressure cooker you can actually get it done in 5 minutes. Those things cost about the same as rice cookers did back in 2008. And you can cook briskets roasts and Chicken in them as well. It's probably one of the most useful kitchen tools for somebody who may not have regular access to a stove or oven and just has wall outlets.

Like Evilsasuke 12223 said, "that's a really long time..." That means all up you have the rice on the stove for 40 min (and off for 20). Cooking instructions say boil for 12 minutes and its done... I know this is a different method but if you are first 'boiling' it for 20 min, wouldn't it then be overcooked and soggy? Why am I asking questions?? This guy obviously knows what he is doing.

2:16: boil the rice on medium heat for 20 minutes, lower the heat to minimum and boil for another 20 minutes and then lastly let it sit/cool down for 20 minutes= total of 60 minutes/1hr? I know i'm not the greatest cook or professional cook but even I know that cooking rice does not take an hour to cook. But then again, this video is about making perfect rice and maybe it does take that long for such perfect rice but the kind of rice I've been eating that takes just couple of minutes taste great as ever. Has anyone even tried this yet? Cooking the rice for an hour is a long time. lol but great informative video.

The finger ratio works every time with a rice cooker. Sometimes the TV personalities get language back words and it does not get edited in post production. I think he said 20 minutes boil and then meant 20 minutes on lowest setting. Then 20 minutes rest closed flame. Start rice and prepare and cook everything else is what happens on the shows.

On his show, he always said "Two to one!" I always use that ratio of water to rice. Bring to boil, reduce heat to medium low. Cook at a medium boil for 10 minutes or until the rice has absorbed about half the water. You're trying to steam it, so keep the temp up for the 10 minutes. Reduce heat to low, cover for 5 minutes. Uncover, fluff w fork, re cover off heat for at least 10 minutes, fluff again before service. This works great for Chinese rice.,

Would love to have a rice cooker, but unfortunately they're all nonstick, which concerns me. And it's one more appliance to store in a small kitchen. It's just as easy to get perfect rice by rinsing, letting it sit in a strainer a few minutes, then add water to my index finger first knuckle, and cook in my microwave: 2 minutes on high, then 22-24 minutes on low/2. Never can burn in the microwave, have done it that way for years, creates no heat in the kitchen. This is for basmati, and I prefer the brand Daawat.

You don't need to boil it for 20mins and simmer for another 20mins.Just bring it to a boil,turn the heat off and in 20 mins it's ready.The rice will steam on it's own in the pot.

Different kinds of rice require different amounts of water, so if you use this method, some types, especially Jasmine rice, will simply not come out right. Similarly, different types of rice require different cooking times.

@AJtteoe i was thinking the same thing. i was taught to bring the rice to a boil, then turn down to medium low for 20 min, and it is done. whenever i have forgoten the rice and left it boiling for even 10 minutes, the water ends up either gone alraedy without the rice being cooked, or the rice is burnt or sticking to the bottom of the pan. he knows what he is doing and i love the guy as a chef, but i am shocked that these things don't happen when he does it this way

The cover should be off the pot before the water boils, wait until the water reduces to a little bit above the rice, then put the cover on and reduce heat to the lowest.

40 to 45 minutes?!! The rice I make is usually done in about 15 minutes. Well, anways it's been nice watching him make this, it's well done, but that time it takes is quite long for me. Also, yes, the rice I make is cook nicely haha, it's not half raw x)

Why does it take him so long? With my basmati, it takes 2 minutes on high plus 22-24 minutes on low (2) in the microwave or on the stove. Even at his lower altitude, it shouldn't take 40 minutes.

I'm really kind of disappointed that he didn't show the traditional ceramic Chinese rice cooking pot. Use the finger method to determine the amount of water, bring to a good boil and take it off the heat. The rice is ready in 20 minutes or maybe half an hour.

Not to sure about cooking the rice for 40mins.....isn't that over cooking it? The way I cook my rice is I washed it a few times until the water is clear. As for the water, it should equal with the amount of rice.... 1 cup rice, 1 cup water. Bring the water to a boil, put rice in, stir, bring to boil again, place lid on and turn to low and cook for 20mins, then let it rest "steam" for 10mins, fluff rice with top of fork while putting it into a bowl...done.

I don't know what kind of rice he's using. Maybe I missed it. I've never seen rice that had that much outside starch to wash off, unless it's sticky rice where you don't wash it off if you use it for its intended purpose.

I always rinse and soak the basmati rice and always succeeded in cooking it, I bought Jasmine rice, and did the same thing, but when I cooked it, ugly mushy and sticky rice, I tried another way which is to rinse it without soaking it, I boiled my bouillon and drop the rice for 10 drain it and left it covered with towel for about 15mn heat off, but my rice has the same sticky ugly look, I will never by this kind of rice, ANY ADVISE PLEASE

HOPUS1000 toast the rice in an oils spoon, until starting getting clear. After that, put very hot water, even from the microwave. Live in hight- medium for 5 minutes, cover it for 15 minutes and low the flame. I promise you will love it!

people, rice cooker is an invention from the 1950s. Once it got caught on, it was a must have for every asian family (unless u do not have access to electricity). However, there are still europeans are still doing rice over a stove. But, why?

+JAMES COLGAN I agree you'll have burnt rice. 20 minutes is all you need for plain white rice to cook. The type of rice you prefer is strictly up to the individual. Another thing when the water begins to boil and the level reaches the rice level lower the heating source to the lowest point and begin your 20 minute countdown. You could periodically check the progress after 10 minutes but it's really not needed unless you have been taught to "move" the rice from bottom to top from your mentor.

+JAMES COLGAN I move the rice from top to bottom to ensure the grains are loose when the final cooking time has been reached. I was taught this way from family members and the rice was nice and fluffy and loose grains. There are times when a cooking process goes through a complete 20 minute cooking interval and you'd get clumping or some hardened rice on the bottom depending on the pot used. We're human and mistakes tend to happen.

Uh an hour for rice? That's a bit excessive. Just bring to boil, drop to simmer until the surface has small bubbles, cover and cook at simmer for 15 minutes. Done.

He is cooking the rice far longer than necessary and it is going to turn out too mushy. He is also making measuring the water too complicated. Whatever container you used to hold the rice, you simply fill it up twice with water to the same level as the rice was. Cook for 20 minutes over the lowest possible heat that will just bring the water to a barely noticeable simmer. At this point it is ready to eat. If you let the rice boil rapidly for more than a minute or 2 the grains are going to break and you'll have a starchy mess. Many kinds of rice do NOT need to be rinsed beforehand. He is worried about too much starch in the cooking water but rapid boiling and long cooking is going to release more starch into the water than the amount he removed by rinsing.

those rice are not perfect. they are too moist and clumpy. thats not whay i call fluffy! and this is because u keep the lid on tight for that extra 20 minutes. u gotta let the steam out. thats what a preasure cooker does also. it lets the steam out. fluffy is when the rice parts and opens up just by touching it with a fork. these are not fluffy, but moist and heavy and clinging to oneanother.

It works every time. I have used this measuring method (not the cook time) for more than 15 years. No need for a measuring cup.
