For lots of different reasons, we all need to cook for one now and again. As a stay at home mom, I do it every day! I thought I would share some great single serving recipes for when you need just enough for one! These are some of my favorite easy single serving meals (for lunch or dinner!)

Here are the measurements for these recipes:
Pizza dough:
2/3 cup all purpose flour
1/4 cup water
1/2 tsp baking powder
1/4 tsp salt
1 TBS oil
blind bake 425* for 5 minutes, add toppings and bake for additional 7 min
Falafel:
1/2 cup canned chickpeas
1/8th large onion
a shake of the following spices: salt, pepper, coriander, cumin, garlic powder
3-4 TBS flour
Crescent roll galette:
4 crescent rolls
2 eggs
fillings of choice
bake at 375* for 20 minutes

I also love crescent rolls. He hates the texture. So your crescent egg galette is perfect for me. Love the toppings too...

Another great way to make a personal pizza is to use a flour tortilla shell. So easy and so affordable!

Everything looked amazing! I absolutely love falafel and breakfast sandwiches are sooo good. I really like them on waffles too. The egg with cresent rolls I'm going to try. Sometimes you see something so simple and just think, "Duh, why didn't I think of that!?" 😉

I always keep a can of crescent rolls around, you can do so much with them!!

Hi Claire, thanks for sharing. This is perfect for me. I cook for my husband whi is Diabetic, has a heart condition and kidney disease. He's on a special nutrition program. I have a few food allergies. So sometimes its difficult to meal plan for both of us. Either he doesn't want what I make, or I don't feel like eating what I cook for him. Lol . So to make individual portions for eather of us is perfect. I love breakfast for dinner or lunch. I think my favorite might be the personal pizza. Quick to make, with healthy ingredients of your own toppings. I'm a mushroom lover too........
