I tryed some BBQ Ribs at Hutchins BBQ the other day that had the membrane left on, and I was shocked at how delicious they were. The membrane was actually a pleasant part of the BBQ. So I decided to experiment with some Baby Back Ribs, and in this particular video I left the membrane on but scored it. They came out excellent and I will be doing this more often. The membrane gave some added texture and flavor to these ribs. Oklahoma Joe's The Higland smoking @280 degrees total cook time was 5 1/2 hours. I scored the membrane in an X pattern. I put mustard on the ribs as a binder for the dry rub. I used Big Moe Cason Competition Rib Rub and added some Big Moe Cason Texas Brisket Rub. I also spritzed the ribs with a 50/50 mixture of apple juice and apple cider vinegar at the 1 hour mark and every 30 minutes after that. Around the 3 hour mark I wrapped in foil with brown sugar, honey, and butter for around 2 hours. I then unwrapped the ribs basted them with Stubbs Sticky Sweet BBQ Sauce and returned them to the smoker for around 30 minutes. These ribs were some of the best Baby Back Ribs I have ever had.
