This week I’m smoking Chicken Leg Quarters and finishing them with an White BBQ Sauce made famous in the state of Alabama.
You can find chicken leg quarters fresh or frozen for as little as 0.50¢ per lb, so we’re talking inexpensive meat here. If you’re doing chicken for a crowd, chicken leg quarters are the way to go.
Remove the chicken leg quarters from the packaging and place in a large plastic bag. To get some flavor into the chicken leg quarters, I marinate in 1 bottle of Zesty Italian dressing for at least 4 hours. After several hours remove each chicken leg quarter from the marinade and let the excess drip back into the bag. If some of the spices from the Italian dressing stick to the outside , it’s ok.
For the outer seasoning I use a blend of seasonings I call my “Chicken Rub”
Here’s the Chicken Rub recipe:
- 3 cups Salt
- ¼ cup finely ground Black Pepper
- 1/8 cup ground red pepper
- ¼ cup Granulated Garlic
- ¼ cup Chili Powder
- ¼ cup Accent
Sprinkle each side of the chicken leg quarters moderately with the chicken rub and let it sit while the smoker is coming up to temp. Today I’m cooking on a Yoder pellet grill but any grill or smoker will work for this recipe. The key to good chicken is maintaining a temperature of 275-300 degrees. It may sound a little high for smoking, but trust me; this range will cook the skin perfectly while the meat stays tender and juicy. For smoke flavor I use Cherry pellets on chicken because they’re mild. If you’re using something else be careful, because chicken can absorb smoke fast and it will taste bitter if you go to heavy with the wood.
When the pit hits the target temp it’s time to start cooking. Place each Leg Quarter skin side up on the rack and close the lid for 1 hour. Keep an eye on your cooking temperature and hold it at 275 degrees.
After an hour, the chicken skin has started to get some color and firmed up a bit. Now it’s time to flip the chicken skin side down to really render that fat. This will give it that soft, bite-through texture. There’s nothing I hate more than rubbery chicken skin! Set a timer for 30 minutes.
Once the timer goes off, flip the chicken skin up. It’s a good idea to check the internal temperature here. Chicken Leg Quarters need to cook to an internal of 175 degrees, at the 1:30 mark they’re right at 160 internal, so they should need a little more cooking. I set the timer for 20 more minutes at this point.
At the 1:50 total cook time mark, these thighs were registering just over 175 degrees which is right where I want them. It’s ok if the temp slips past 180. Like I mentioned earlier dark meat is forgiving and will remain juicy even if it’s a little over cooked.
If you want to go the traditional route, you can glaze these chicken leg quarters with your favorite sauce right at the end of the cooking process. I’m opting for a different style of chicken today. This is where the Alabama sauce comes into play. It’s a mayonnaise based sauce with a touch of vinegar and some heat. I promise you it taste much better than it sounds! Here’s my version of a Alabama White BBQ Sauce:
- 2 cups Duke’s Mayo
- ½ cup Cider Vinegar
- 1 TBS Course Ground Black Pepper
- 1 TBS Granulated Garlic
- 1 TBS Sugar
- 1 heaping teaspoon minced Horseradish (I use the kind from a jar)
- 1 tea Salt
- ½ tea Ground Cayenne Pepper
- Juice from 2 Lemons
Whisk the above ingredients in a large bowl and store in the refrigerator for a few hours before using. It makes enough sauce for 8-10 Leg quarters.
To sauce the chicken pour the White Sauce into a bowl large enough to hold a leg quarter. Dip each piece into the sauce and turn to coat both sides. Now you have Alabama Leg Quarters! The sauce is creamy, tangy, and spicy all at the same time. The next time you’re thinking about cooking chicken; make up a batch of this white sauce and give it a try.

what I LOVE about Melcom's videos is that he never tries pushing any brand of anything on you. He always states " Doesnt matter what kind of grill or smoker you want to use " same with seasonings... hes not always pushing his brand down your throat ( no pun intended :-) ) Hes all about the cooking and HOW TO.. in my book, that puts him at the top !!

I made this as well as some other of your recipes for my college grad party on the 20th. You could say it was a Malcolm reed catered event. :) All I have to say is ahhhhhh nom nom nom nom as well as the ladies LOVED this chicken more than using their smart phone. Had to be the most silent they have been while eating I have ever seen. Keep up the great work, You're the man!

I grew up in Decatur, AL and ate at Big Bob Gibson's growing up. They are famous for coming up with this white sauce, its used all over North Alabama now. Your recipe looks to be the closest I have seen to the real stuff. Thanks for sharing this, looks great!!

I made this chicken and brought it into work today. I knew there were going to be people that wouldnt want to eat a whole quarter, so I got split drums and thighs too and did them all the same way. I glazed with regular sauce instead of the white sauce, but the complements on the chicken were awesome. Everyone love it. I cant wait to do it again and have the white sauce too! Really appreciate all the information you put out there.

Absolutely addictive white sauce recipe! I've tried a few white BBQ sauce recipes that came close, but your's was pretty much perfect. I almost never use a recipe "as is" without a few tweaks, but I'm having a VERY hard time thinking of anything that I would change. In the spirit of small changes, I did stick with my own way of grilling the chicken ... but the sauce was excellent! Thanks for sharing!

Malcolm, I made this the other day and it was great. That sauce is amazing. I probably cooked the chicken skin side down for too long but that sauce really helped it out. People were a little skeptical about the sauce because they're not use to it but they were believers after they tried it.

Made these today in my smoker, came out fantastic. A couple of my quarters didn't render out all the way, but thats my fault they looked so good i couldn't wait and pulled em too soon. This was SOOOO good. Just made it today. Didn’t use the rub, and had to fake an Italian dressing marinade since the stores are out of so much. But, made the white BBQ sauce and it was a huge hit.

I've been marinating chicken in salad dressing for @30 years. @10 years ago I, mostly, switched from "zesty Italian" to "Golden Caesar". The brand doesn't matter but you want to find one that is oil and vinegar based with anchovies. "Creamy" Caesar doesn't penetrate as well, tends to burn, and usually doesn't include the anchovies. Another option is to use whatever Italian dressing you choose but add a little extra garlic and one, small, well-mashed anchovy. There's just something about that anchovy that adds layers of flavor to chicken. The same trick also works really, really, well with salmon or tuna steaks but then I tend to avoid the anchovies. Sometimes I mix 1 part French dressing to three parts Italian dressing for fish. Cheers!

Great Job Malcom. Those quarters turned out great. Can't wait to try this version of white sauce. Here on the Eastern Shore of MD we have a white sauce that is awesome as well. It is a mix of salt, pepper and poultry seasoning. Then you mix cooking oil with the seasonings and then blend in a well beaten egg to make and emulsion. After that you slowly add cider vinegar and mix. Pour on chicken and place in fridge for several hours. Then baste with it as you grill.

Great vid, the skin is almost always my problem, even at the higher temp. I think I need to go direct heat at the end. Oh well, I will definitely be trying that white sauce, probably this weekend :-)

Melcom - try adding Dijon mustard to your Italian dressing marinade. For some extra tang add some red wine vinegar. Can also be used as a grill baste or go ahead and use your white sauce. IMHO mustard is an under appreciated grill marinade for chicken or pork.

The ratios seem so far apart. Did anyone else use this rub?

I use Italian Dressing all the time for Chicken Marinade. Along w Half a Sweet Onion ,👍👍🔥🔥
