Just made this with only a half a jar or of 505 and added one charred poblano and dear God, this was the best mac and cheese I've ever had. Thank you All Things BBQ.

I made this as a side dish at my bbq about a month ago. People are still talking about it! Killer recipe. I did cut the 6 cups of milk to 5 (as he suggests to make it set up more) and did half the amount of green chilis which I thought was still plenty in the end. This is a dish that's worth the effort!

Ive made this recipe multiple times now and it has never failed. It is always the hit of the party. Great easy recipe that turns out perfect every time.

First time making this and doubled the recipe for a large gathering. Used a large foil pan and it was scraped clean by the end of the night. I do think it was a little too wet, so next time I'll see how cutting back on the milk will help. Flavor was great, with a bit of heat. 2 thumbs up from everyone that tried it.

Hi Guys! I really like your videos! It would be nice to see some homemade rubs and sauces. Because it's almost impossible to get the things you use in germany (and probably the rest of the world) Keep up the good work!

Recommend adding panko breadcrumbs and bacon together as a topping last 45 minutes on top.

Made this today in the oven. (it was raining and I didn't feel like messing with it). This recipe is LEGIT. My only regrets is that I shoulda fired up the 1320 anyhow. Good job Chef Tom and Thanks Yoder Herb for sharing!

To be sure, if I were making a double batch of this recipe, would I simply double all ingredients in a bigger pan or should I hold back on anything? The milk maybe? I was already thinking of adding a tad less for a slightly thicker dish, just wanted to be sure. I’ll be cooking this for a large amount of ppl. TIA. Also I’ve had this already and it is for sure top 5 mc n chz of all time

Yes! Simply double all the ingredients! I've made large batches of this with a great turnout. This recipe uses a half pan, so using a pan twice the size (full hotel pan) would be the correct size to cook. I think the ratio will work out for you! If you want something a little thicker you could let it cook for just a little longer, too. Tom mentions taking out some of the milk, but I wouldn't take out too much, to avoid crunchy pasta! -Chef Britt @ATBBQ

We actually have a retail store that sells Plowboys BBQ products in Wichita, and Todd Johns is a good friend. We do however do cooking classes and private events in our teaching kitchen, but no plans to open a restaurant... it's too hard! :)

At this time, yes they are all located at our Wichita location. We have had folks drive or fly in from Alabama, St. Louis, Nashville, Texas and more, with monthly visitors from Oklahoma and the KC area. If you are ever thinking of traveling for a class, let us know and we can recommend a good hotel and other things to do while in town.

Is that an amazen smoker tube at 1:50? Do you all tend to use those most of the time with pellet smokers? Or just for some things?

Yes it is. It was used for a separate recipe earlier that day (you can see the pastrami on the top rack in that shot as well). We happened to be putting the heat on the pastrami quickly, so it was hot, which is why we used the A-MAZE-N Smoke Tube. So to answer that question, we don't use it all the time, and it mostly gets used in two situations; when we want smoke on foods we're cooking at high heat, and when we are cold smoking something. Ha! Yeah, certainly not a low fat recipe... we like to eat a lot of salad and grilled chicken breast on our days off from cooking to help maintain a little balance (and keep our doctors happy). :)

How was the texture of the past? I find it hard to imagine the pasta not over cooking being in a smoker for that long.

Smoker or not, it's generally possible to use non-precooked Pasta dry into a casserole dish, as long as you have enough liquid. I've done it myself with a premade casserole fix, where I used e.g. completely dry penne, and it ended up being tender and not overcooked.

I used Mozzarella instead of the Pepper Jack to tame it for my youngest son. It had a bite to it but definitely not hot. the flavor is what i was trying to preserve. For different audiences I think I can adjust the heat.

I made it! Its fuckn delicious! However, your recipe insists on too much cheese... The cheese will harden up after sitting 30+ minutes. Next time ill try more Cream less Cheese. And I too Used 2 Charred Poblano peppers and 1 Serrano, instead of the Jar.
