Time: ~25-30mins per lbs. + 1 hr
Prep:
Fresh / completely thawed turkey
Remove from fridge.
Start Yoder:
Settings: Trap door: Closed
Damper: 10 inches open
Temp: 180°F
Pre-cook:
Inject 60ml/kg
Brine:
2 teaspoons of sugar
2 teaspoons of kosher salt
2 cups of low sodium chicken stock
RUB:
Vegetable oil
Garlic powder
Mrs. Dash - garlic and herb
Medium fresh ground pepper
Optional: Rosemary / Parsley
Stuffed with:
Whatever you want
Cook:
1 hour @180°F
After 1 hour, Increase to 230°F
Stay at 230°F until Turkey is at 168°F
Optional: Increase to 300°F for crispier skin
Remove and let sit for ~10 mins Foiled
Carve
Serve
