Smothering is a cooking technique from Louisiana that involves smothering meat, seafood or vegetables in a liquid over a period of time. In this case we smother potatoes chicken and sausage in a rich and flavorful homemade chicken stock. You can get 6 to 8 or possibly more servings from this recipe. It's one of New Orleans classic comfort foods and it is delicious. Hope you all will give this recipe a try.

This was my favorite thing mama would make when we were younger! Cheap, easy meal for her to make for all of us kids. I love that you encourage making your own broth with your recipes. It’s how I think when I cook now. It just makes sense and tastes so much better than store bought!
