The checkbox to disable the solid body is there for convenience. If the body was already disabled previously in another operation it would not be available. The best way to view the status of a body and enable or disable it is to right click at the top of the study and go to Component Control. "Disable" means the solid body is not considered a solid object, which is appropriate if the body is only being used to define initial conditions, identify mesh regions, or allow for measurement in specific spatial regions. Enable simply means it is treated as a solid and will contribute to the closed volume calculation and will prevent fluid from flowing through it.

There should be nothing in the way you setup and run studies that has changed in between versions that would cause this. It is possible that there is a bug in the specific version you are using that affects your workflow or perhaps your specific installation is having issues. I would check to see if the same studies solve on another computer if you have one, or reach out to your support provider to help you troubleshoot the issue. If your version of SOLIDWORKS is older it may not have that functionality, and also you can expect different results when you right click on the color bar or the number scale. Additionally, if you are in the middle of a command, such as editing the definition of a plot, the option to modify the scale using right click won't be available until you accept that dialog and get out of that command. All of the walls in the study can be specified as open or closed, if the flow reaches the top of the tank it will interact there. It depends on the setup of the study.
