I hope you enjoy it! Some of the herbs might be a little hard to find if you don't live in Japan, but these are just some ideas. Somen can be served with anything from ham to basil to tomatoes. Thanks! Pickled veggies are a great idea. Asazuke could be served as a side dish, or if you have something more salty (like umeboshi or shibazuke) you could mince it up and include it in your plate of condiments to add to the sauce.

Good idea! There's a different way of serving this here in Japan with paper thin slices of citrus (usually sudachi) laid on top of the noodles and water. It adds a mild tartness and the flavor of the zest. It would work well with lemon too!

It's not easy to buy somen in my country, at least in my city, so instead of using somen, I used dried rice noodles ("bún khô" in Vietnamese). I can't find dashi packages in my country too 😂 so I mixed soy sauce with a broth made by boiling baby shrimps. That's how I can enjoy the dish in my country. 🥲

Great idea! They're a similar thickness. I don't know about Vietnam, but in Indonesia they have a smoked skipjack tuna that I'm told tastes a little like katsuobushi (the main ingredient in dashi stock). This will probably get you closer than dried shrimp.

Less fermented but saltier. Lighter color so dishes don’t get too dark

Sorry for the late response. Casey and Darren nailed it. It's the type of soy sauce most often used in the Kansai region of Japan (area around Osaka). In Kanto (the area around Tokyo) the regular dark Japanese soy sauce is the one most commonly used.

@@restaurantman Yes, I answered already in that tutorial too! Loved the flavours... I have tried them... I usually have Dim Sum at home.. but will like to have some more dipping sauces please ???. I usually go to Hot Pot restaurants and I have learned that dipping sauces is a way to level up even boiled and not seasoned food.

@@NoRecipes Great! I have added your list to my favourites. I wll try to makes them all... or at least the ones that have ingredients available in Perú. I wish to learn how to do something called tamarind sauce (for fried dumplings), spicy peanut sauce for summer rolls, there is also a peanut and cilantro dipping sauce and something like raw slices of garlic + soy sauce + something that taste like alcohol and some kind of chillies both for hot pot , the ginger sauce for boiled hen, the other one that gives flavour to "yellow hen" , and the one that is made with tsa keon (dried ginger) and salt and who knows what else to season boiled hen or chicken... at least a couple of them if you don't mind, please. I am loving your channel and my mom loving your flavours (cause I cook for her, she is already an elder) I find your videos very positive, easy to underdtand, to follow, and the edition is just perfect... not too little , not too much...
