Southeast Asian Coconut Fried Rice
Serve 4
400g rice, washed
15g pandan leaves
1 can (400ml) coconut milk
250ml water
1 tbsp butter
5-6 shiitake mushroom, diced
226g plant-based meat (I used 2 impossible burgers)
5 eggs, extra if you want additional sunny-side up egg
Kecap manis (sweet soy sauce)
Soy sauce
Thai basil
Cucumber, sliced
Roasted peanuts
Tomato, sliced
Cook rice, pandan leaves, coconut milk and water in a rice cooker or pot until cooked through.
Once the rice is cooked, add butter and fluff the rice until combined. Set aside and let it cool.
Break apart and sauté the plant-based meat until slightly brown. Transfer it to a bowl.
Sauté the shiitake mushrooms until brown, gather them to a corner. Pour a little oil in the center, beat and pour the eggs in the pan, fry them until they are half way cooked.
Add the rice, kecap manis, soy sauce and plant-based meat. Stir until incorporated.
Add the basil and stir a few time.
Garnish with tomato, cucumber, and roasted peanuts.
If you like, add an additional sunny-side egg for extra protein.

將米飯、香蘭葉、椰奶和水放入電飯煲或鍋中煮熟。
米飯煮熟後，加入奶油並將米飯拌鬆直至混合。 放在一邊讓它冷卻。
將植物性肉末炒至略呈焦。 把它轉移到一個碗裡。
將香菇爆香，收集到一個角落。 中間倒入少許油，將雞蛋打散倒入鍋中，煎至半熟。
加入米飯、甜醬油、醬油和植物肉。 攪拌直至混合。
加入九層塔並再炒幾下。
用番茄、黃瓜和炸花生裝飾。
你也可以再添加一個額外荷包蛋。
