Years ago I found a cookbook at my library that featured several good Southern cooks and features their favorite recipes and some great personal stories. One gal said that her aunt claimed that her secret to growing old was eating sweet potatoes every single day. She made biscuits, pancakes, cake, pies, candied, and more. Another cook made a different fruitcake from a recipe that she had modified from her family member who used some of all of the preserves that she had put up the summer before. She did not use the candied dried fruit. I made that recipe and it absolutely made a cake about the size of a small Buick and weighed a ton. It was not bad, but was expensive to buy all of those jars of fruit.

My mother would sometimes add a drop of orange juice to her candied sweet potatoes and it was so good! Love ya! ❤

The way my mama cooked collards, turnip greens cook the greens in water until they are real tender. Fry you up some fat back until you get the grease you think will season it good. Drain your greens you are going to cook and add them to the fat back grease in the fry pan.. Add a little bit of sugar. Depending on taste.Some like it sweeter than others..Add some salt if needed by taste.. Fry in grease until it is well seasoned. Don't have a lot of liquid. That is really good.

I and my mom don’t make ours that make ours that way. We make ours with brown sugar and butter but we make ours to end up with it being syrupy .

I would have added a little lemon and vanilla extracts and cinnamon to those sweet potatoes. Now, the greens-some hammock, apple cider vinegar, garlic, and onions. Now, this is Old School.

My mom made hers in a cast iron skillet. Made her caramel icing for her cake in a cast iron skillet. She cooked a lot in her cast iron skillet.

I’ve grown up eating collards, turnips, etc. and learned to cook from my mother and mother n law and other women in the family. We always used bacon, bacon grease or another kind of pork. That’s what made the pot liqueur taste so good. Olive oil must be a preference of yours for health?

I use brown sugar in spaghetti sauce, soup, dipping sauce. I don't really keep granulated sugar in the kitchen.

Oh my gosh those candied sweet potatoes brought back memories my Great Aunt Mildred's candied sweet potatoes. She added what she called a good slug of orange juice, (that's how she measured), to the liquid and maybe a teaspoon of orange zest, Thinking of that cornbread soaking up the pot liquor from the collards has made me hungry all over again, Anybody who sits down at your table is getting some seriously good eats!

Yep,, Arkansas folks use bacon grease. We Never throw out bacon grease.💖

Hi Tammy and Chris. This is my type of meal. Cornbread is my favorite thing in the whole world. Chris you did a great job of cleaning the greens! Tammy your hair is so cute short like that! Would you PRETTY PLEASE whisper in White Lily's ear to twist the arm of northern Walmart (or any big store chain) store managers to carry it??!! I just know Im not the only northerner who wants easy access to White Lily. This meal tonight looks like the bomb and I really want some White Lily to make GOOD corn bread for a change. I've never cooked collards 2-3 hours. I cut mine up into thin slices. That way it doesn't take forever.

I don't think the size makes as much difference as whether they are larger older leaves verses young small tender ones

HEY GUYS, HOPE U & YR LIL POOCHIES ARE GOOD & WELL. NOW I'VE GOT TO BE HONEST, I'VE NEVER HEARD OF COLLARDS SO I NEED TO DO MY RESEARCH, IT LOOKS LIKE A SAVOY CABBAGE WHICH WE HAVE HERE IN THE UK. I LOVE SWEET POTATO FRIES, THEY'RE JUST SUPER, UBER DELICIOUS, I COULD EAT THEM ALL DAY LONG WITH SOME COLESLAW & BBQ STYLE MEAT. . . THAT'S GONNA BE OUR DINNER TOM'W, OH YUM INDEED! I MIGHT HAVE TO TRY THEM CANDIED BECAUSE I CAN'T IMAGINE THE FLAVOUR OF CARAMEL(ISH) POTATOES BUT I'LL SAVE THAT FOR ANOTHER DAY. Tammy, I'm sorry to send this question to you so late. I've been making candied sweet potatoes for years for my family..usually from 10-15 ppl but never fully satisfied with the way they come out. I like making them stovetop too. Would you suggest another way to cook them to possibly save time and they would be cooked through well? Thank you kindly.

This is exactly the way I do it the lid makes them get done. You may have to make them in 2 batches. To me they are not as good unless they are just out of the skillet.

Delicious! Tammy, I add 1/2 orange juice and 1/2 water to my sweet potatoes and everything else is just like yours. You may want to try this sometimes. It's really adds a little something good. 😊

@@rhondabutler4172 it was 63 here this morning, love it! It's been a tough summer, the heat and humidity are hard on me but I'm okay🙌🙏 We had hoped to take a trip out west but that's on hold for now. Lord willing, maybe next year. We take day trips, mostly riding the Blue Ridge Parkway. Looking forward to the fall and taking a few trips. We hope to go to Pigeon Forge, Tennessee in December to enjoy the Christmas lights (and shopping😉)🎄 I'm sure you and Butch will have some fun traveling. Be safe and take care...I Love you 🥰❤️

I really really love collard greens. I usually make my pot liquor first using neck bones or sometimes smoked turkey wings. Love using better than bouillon. And they are really good for you.

Your food looks delicious! I was so happy to hear you mention using your “old fashioned” pressure cooker to cook the greens in. I have one of those and never think to use it. Would you ever consider doing a video on using a pressure cooker for some meal ideas?
