Fried chicken
2.5 lb chicken wings
1 tsp chicken boullion
1 tsp season salt *use to taste like salt
thyme
sage
1 tsp salt free cajun seasoning
1 tsp maggie seasoning (optional)
1/2 tsp ginger powder, black pepper, rosemary
flour
potato or cornstarch
buttermilk
Mac and cheese
1/2 stick butter
1- 2 tbsp flour
1 can evaporated milk
1 1/2 cup heavy cream
1/2 cup chicken broth
garlic powder
black pepper
cajun seasoning
8 oz colby jack cheese
8 oz cheedar cheese + more for the top of the mac
paprika
Yams
4 medium yams
4 tbsp salted butter
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 cup brown sugar ( use 3/4- 1 cup for sweeter yams)
1 tsp vanilla extract
Green Beans
drained canned green beans
chicken boullion
cajun seasoning
onion
garlic
*Please use all seasoning to taste*

I’m a white teen who’s never had soul food before. I was interested in expanding my food palate (I have a passion for trying different foods) so I followed your recipe without any changes and o…m… g… I was immediately in love. The flavors were dynamic, there was just the right amount of a kick but it was still warm and comfortable and homey. Everything I could ask for in a comfort food. (Tip for the Mac and cheese: if you have the ability, try to not use any shredded cheese. Use fresh grated from a block! The shredded cheese has a powdered anti clumping agent that prohibits that glorious melty, pizza commercial level cheese stretch when it’s baked on top :))

Love my mother to death. I didn't know how much work she used to do cooking like this EVERY DAY. I kid you not. She cooked full-course soul food meals...breakfast, lunch, and dinner...daily. We only ate out every other month on Sundays to give her a break. I didn't realize how good we had it until I went to college and heard kids say that spaghetti was a full-course meal. Spaghetti was a side item in my home. None of us were overweight because we ate soul food because we also didn't eat McDonald's, Popeyes, Wendy's, or any fast food really at all...very rare. I appreciate my mom seeing how much work she did over the years. She was able to do this because she was a housewife and didn't have a job with a paycheck, but she definitely put in work raising 5 kids, cooking, cleaning, teaching, and everything else.

I lived with my parents, 5 siblings and my grandma and she was the same way. She'd whip up huge meals 3 times a day. We'd joke that she could create a meal out of thin air because I swear there'd be hardly any food in the house and then next thing you knew, she'd whip up a huge meal. None of us were fat, either, because the food wasn't full of artificial preservatives and we walked a lot, too. My grandma, who was from the Caribbean, was the world's best cook, no exaggeration 😊

For me, a Canadian who's never had a southern meal I really enjoyed this full meal video. To see everything that would be eaten together in a proper southern dish is very helpful in case I dare to try and cook it for myself one day.

Yes I always freeze we are 2 but hubby is super picky does not like mac or sweet potatoes { something wrong w him } so yep I often put leftovers in freezer good for work lunch too 👍🏼

This was super comforting to watch. It took this foodie back to my childhood (‘90s kids, stand up!). My parents threw DOWN in the kitchen with food like this. My daddy transitioned from this side of life back in 2013, and my mom has late-stage Alzheimer’s. Watching your video truly took me back to beautiful times. Thank you for sharing your gifts! Of course it looks like food from the south, that's where most of the slaves were. These are traditionally black foods, people in the south eat it because black people used to cook it for them.

@@Mmjk_12 Baked Mac and cheese is different from regular Mac and cheese. The fried chicken the Scottish people made didn't have seasoning, it was literally just a chicken fried. No seasonings or anything else. It was plain. Black fried chicken had seasonings, that's the difference 😋

I’m so happy for the ‘white teen ‘that loved your cooking. That’s exactly where we are, That makes me sincerely happy you made a difference in the introduction to soul food. Thank you!!! Next step is fried Pon Bread, with 3 finger pats for texture, pop it open hot so you can stuff it with green or white onion, pickled banana peppers, or as my nana said “ what ever was fresh out of the garden”. Then comes true to true fried green tomatoes. Thank you for sharing, Your exactly right, you can find seasoned green beans, okra and steamed tomatoes, you make a delicious Mac and cheese, corn bread and fried chicken. Thank you!!!

I make Korean and Vietnamese dishes at home with traditional ingredients from the local markets, but I'm not Asian. Cooking is a learned skill, it isn't bred into us, and should be shared.

I can’t believe such a relatively short video can give so much advice for a whole meal. Great job! I learned some new tips like washing the chicken with vinegar and lime, and also the part about letting the chicken batter flour rest and absorb before frying it! Great tip. And the double coating, too. So many great tips and tricks in a pleasant and concise video!

I love how you use every herb and spice in the cabinet. Rosemary and thyme are VERY underrated and underused. Fresh herbs can make a $6 plate of food sell for $12. You clearly know what you're doing!

I used to have a flour mixture with about 8 different spices and herbs mixed into it that I would use to bread chicken for frying. Consequently I lost the recipe and haven’t been able to find anything like it. Is anybody familiar with it?

never could understand the extensive cleaning of the chicken.... hell your frying it rinse it make sure it's been singed and fry it... I gurantee it kills everything. now what you need to worry about is what's in the chicken not on the outside.

Chicken never, ever, ever needs to be cleaned. Cooking it to the right temperature kills the bacteria. Cleaning it risks contaminating your kitchen.

You'll never fully clean that dirty bird. Slave food turned into soul food. Black people traditionally and naturally didn't eat swine nor dead birds. They call poultry "fowl" because it is "foul" to eat. Chickens eat their own shit, eating one is like eating a vulture or a buzzard. Wake up people, we are natural herbivores.

Im a graduate of the french culinary institute here in NYC and i currently run a 3 star restaurant IN Manhattan. I come from a hispanic background and my mother cleaned chicken also but every place ive ever worked and all my teachers at school all say that rule number 1 is never clean chicken because any bacteria or anything that you think your cleaning off gets cooked off during the cooking process and when u clean chicken over the sink like u just did will spread Salmonella to your kitchen surfaces and u can easily cross contaminate other food which will get u sick. This is why in culinary school and all restaurants do not clean chicken. I just want to spread the word over this misconception about cleaning chicken so everybody can keep their loved ones safe and thank you for the recipe. Ps if you are gona still clean chicken like this throw away the rags or anything u used to clean that surface of the Salmonella and maybe scrub down with ajax your sink and throw away the scrubber too. Heck, Oppressors teach in culinary to eat pork and even shrimp, lobster, etc. which are forbidden bc such are bottom feeders of the ocean... My wife has cleaned her chicken in vinegar and water for 32 years, going on 33 and no one has ever been sick as a result (as have everyone Ik) The Oppressors germ theory is a hoax; truth mixed w/lies to fit their narrative. We must remember, Oppressors who operate 'culinary indoctrine institutes' learned how to cook from the true indigenous ppl and especially women who were forced to care and cook for them. This woman can COOK! This is one of my favorite meals. After seeing this video I cannot buy canned candied yams again. I'm making mine from scratch! Double coating the chicken is sublime with seasoned flour/starch after seasoned buttermilk marinade for at least 24 hours. The only thing I would have done different is add a can of cream style corn to the cornbread, which is something I've always do to see corn in my cornbread besides making it more creamy.

I was taking notes like a fiend when you were doing the chicken. I've been cooking for decades but I always recognize someone I can learn from. The flavor combination on the chicken marinade (and your explanation) are proof alone that soul food can be sophisticated and nuanced while still delivering that "comfort food" joy. I love to hear real chefs talk through their thinking and I really enjoyed what you had to say.

I made your jiffy cornbread, the chicken, and mac and cheese. I screwed up the chicken because I don't think my oil was hot enough. grumble. It was still good, but the outside was overly crispy since I was waiting for the meat to the bone got done. The mac and cheese and cornbread was beyond yummy. I had a bag salad that I had to use b4 it self destructed. Thank you for these videos.

I love how you explain over and over to season your food. I love when my kids bring friends to the house, it’s like watching ppl eat for the first time in their life. Being black, Mexican and Korean my whole life growing up I’ve heard nothing but make sure you season everything. This plate looks so delicious. Oh my goodness! My husband had been asking for fried chicken and my son said he wants buttermilk (and pickle juice!?) fried chicken. I've never heard of either of them, I was taught by my momma to dip my chicken in eggs and then flour, but this looks incredible! And that mac and cheese! Wow! And the yams! Amazing! My exes family is from Louisiana and his Granny would get down! Every Sunday the food and cakes were over pouring in the house. I needed a good candy yam recipe. My family always adds a little yellow mustard to the mac n cheese roux and its great! Even if you dont like mustard, it doesnt really taste of it, just enhances the wonderful cheese flavour

Love to see there are some people, like myself, who still cook this way. This is the food I was raised on, learned from my mom and my granny, now I am teaching my son. No better food than good homemade country cooked soul food! Raised in Appalachia and still here, for me it's heaven. That's also a FANTASTIC way to upgrade your hamburger meat, mix a packet of french onion dip powder into the ground beef and it goes crazy. First time I tried it I actually had genuine tears of food joy

Soul food is really just southern US recipes. It includes alot of frying and use of pork fat, and certain select foods were common like pork and chicken, sweet potatoes and greens, bit its mostly about frying and the use of pork fats
