The foam is the disipitation of protein from the milk and it changes the final product a lot if left in...colour,aroma,taste are the main factors that will be changed...the same thing happens with soup making

It actually doesn't matter how much they put...they have measured how much volume the coagulated soy milk lose after pressed...you can calculate that with your own molds
