As an Italian i would like to give you some recommendations about how to cook a good pasta dish. First: the sauce. This sauce seems good, it is not a real italian sauce, but it's quite similar to the ragù, also known as "bolognese sauce". Second: the most important thing is the pasta. Not every pasta is good with every sauce. The shape is secondary, the main things are the ingredients; the two main categories of pasta are "pasta all'uovo" (pasta made with eggs, like fettuccine, lasagne, tagliatelle, ravioli...) And "pasta di semola" (pasta made with only flour and wather, like maccheroni, penne, spaghetti, maniche...). Greasy sauces, especially with meat, usually go with egg pasta. Tomato sauce, carbonara sauce, pesto and a lot others goes with pasta di semola instead. Third: how to properly cook the pasta. Putting oil in the boiling water is useless. To avoid the spaghetti to stick each other just stir them at least two times during the cooking time. This is the only working way. And then, please, please, don't overcook them, and also don't serve them like Nino's done. You do not want this block of sticky spaghetti dry and glued to each other. To make a perfect silky and creamy sauce that shroud your pasta, just take a pan and put in it the amount of sauce you need. Then take it to boiling adding a cup of the starchy water from the boiling pasta. The last 3-4 minutes, when the pasta is half cooked but still not completely soft, drain it and put it in the sauce pan with the sauce and complete the remaining time for cooking. continue stiring the pasta. Now you are doing the "far saltare la pasta" (make the pasta jump). Your pasta will be waaaaaay better than just a dryed spaghetti mixed with the sauce without love in a cold dish. The best trick I know for pasta sauce is to put it in a cast iron pan after you finish it, and bake it for a few minutes. It makes the sauce taste so much better, adds complexity.
