Great video! Next time, you should have a native Filipino to give you the characteristics of the food. Also, you should try more of the authentic food for each province. Each province has a different way of cooking classic Filipino dishes.

My mom is from the Philippines. This was so fun to watch. I remember loving kaldereta, pinakbet and bokchoy. Unfortunately I went plant based, so can't eat that anymore haha

Enjoy your stay in the Philippines. I am Filipino who visited Spain a few years ago for 17 days, and toured all over the country, including Adrian's hometown Valencia (muchos naranjas!). The culture and cuisine of Spain reminded me so much of the Philippines.. I remember longganisa, paella, polvoron and postre. I am sure you will be able to identify a lot of the similarities between the two countries as you travel the Philippines.

Great to know you love the Filipino food. The dark sauce is diniguan. And the lady beside you was right, it was made by pig blood. Then the dark yellow sauce is kare-kare and it's made of peanuts.
