Panna Cotta = Cooked Cream. If you don't let the cream(!) boil gently and reduce to about 2/3 so that milk sugars will be slightly caramelised, it will be just milk jelly without the right flavor. Too often in restaurants they serve tasteless milk jelly as panna cotta.

I bring cream with sugar and vanilla to boil and off the heat. Cover and let stand for 30 minutes. Cream is tasty and not reduced.

It looks like a lot of gelatine for that amount of liquid. I think this would be rock hard if you had it in the fridge for longer than the recommended time. I think I use about half the amount of gelatine for same amount of liquid. But it also takes a lot longer for it to set. The plus is that I can leave it in the fridge until the next day if I want to make it in advance. Love the flavour combination though. This is most likely delicious.

Small suggestion, wrap a wet paper towel around the rim of the ramekins, will help hold the glasses in place instead of slipping and sliding like they are.
