Today, We are making a soft, tender, spicy, herbaceous and of course, delicious recipe that is called #SpicyGrilledSeafoodCake or widely known as #OtakOtak. Some other Otak Otak recipes won't require frying the paste, but I preferred to be fried so that it can extract a lot of flavour.
In this recipe I'm using the same paste, two different technics, and two outcomes to cook it, the first one is Steam and the other one is Grill. Both outcomes are delicious, give an aromatic taste and the flavors are so bold that I want you to try them at home and serve your family and friends, I am sure that they gonna love this. And not forget to wish a Happy Deepavali to those celebrating 🪔 and Happy Holiday
Ingredients:
- Shrimp Paste (Belacan)
- Shallots
- Lemon Grass
- Galangal
- Garlic
- Turmeric
- Candle Nut
- Dried Chillies
- Sea Bass fillet
- Prawns
- Egg
- Coconut Milk
- Fish Sauce
- Sugar
- Kaffir Lime Leaves
- Banana Leaves

Sherson Lian kicked off his TV career with (and still is!) hosting ‘5 Rencah 5 Rasa’ on TV3 Malaysia, a cooking show that has been on the air the past 10 years, with 24 seasons and 1500+ recipes and counting! He has also hosted multiple TV shows on the Asian Food Network (previously AFC), including "Amazing Food Challenge; Fun in the Philippines', ‘Great Dinners of The World’, 'Reality Bites' and 4 seasons of ‘Family Kitchen with Sherson’ together with his mum.
Sherson Lian is the co-founder of Makhan by Kitchen Mafia, a restaurant in Petaling Jaya, Malaysia and Kitchen Mafia, an F&B solutions company that offers catering, private dining/chef's table sessions, and restaurant/menu consultancy among other services.

My mum will put a layer of daun kaduk before putting the rempah paste. Nice aromatic herb smell.

For 41 years of my life i literally assumed otak otak was fish brain and i avoided them at all cost😂😂😂. NOW that I know wat it is i'll give it a try. Thank you chef

Yes for the steam version usually there’s daun kaduk. But I couldn’t find that day :( .

So which one is your favourite - the grilled or steamed version? Also, what can I serve this with to make it a main meal? So tempted to try! The name otak-otak had always put me off, I’ve never tried it all my life 🙈 🙈 I’m ashamed! Thank you for showing us how to make it. Love your show! ❤

I personally like the grilled version more, but I’m bias I always prefer grilled foods over steamed. But it’s a preference thing. You can try make a big batch of paste and then try them both, for all you know you might prefer the steamed version! :) happy trying

Can I use powder to replace those ingredients..what kind of fish fillet best for otak otak..always want to try make it.. I can eat 40 stick meat otak otak

You can replace them with powdered but they’re prolly not going to be as aromatic. Here I used sea bass but you can use any white fish or even mackerel as well. It’s quite flexible

My family enjoys homemade otak² anytime of the day; breakfast with toast, lunch with rice & toss them in salads of all sorts. Midnights' bites for that satisfying alpha snooze gurrrurree-fiueelleer! Happy dreamland here we go! Thanks for sharing.

For those who has gout ~ what’s the substitutes for coconut milk n prawns. I would be good if there r alternative equal, as I have had not taken otah for years.

Hello, sorry to hear about your gout issues. I’d try just keeping it to fish, or maybe adding in a little bit of chicken tenders just to firm it up abit. As for the coconut milk, you can try replacing it with coconut oil for the aroma and add more eggs to the mixture. Hope this helps!!

Mostly in asian cooking we use to just eye the ingredients unlike the western that uses precise and exact measurements. You know the meme that we only stop adding an ingredient when our ancestors whispers stop? Hahaha...

Yes, after we have mastered a recipe, we surely can do away with measuring, until then…..Well, it just goes to show some of these videos are for mere entertainment; not for folks who are serious about cooking. People who are sincere about sharing any recipe always state the exact or an estimated amount. Don’t BS me with anything less

We malaysian, (malay, chinese, indian, nyonya) we just 'agak agak' the ingredients. There are no specific measurements,i. e. if u like it spicy just add more chillies, if u want thicker sauce just add more coconut milk or candlenuts, if u dont like garlics just put less. Add d ingredient according to yr taste.. This is malaysian style of cooking 'semua terjun sekali'. BTW Shearson lian is a great cook, has his own cooking programe on tv..
