Hello! Following the rough sharpening of the 400 grit in the previous video, this video has moved on to the 800 grit. Ivan spent a lot of time sharpening the base until he was satisfied with the results, and it was very tough work.
Because these knives will be finished on natural stones, the correct surface geometry is crucial.

Thank you! Yes heading back to rough sharpening is not something i like having to do but at times it’s necessary.

Ivan and Yuka, thanks a lot. Ivan, do you think that removing metal can release tensions in this forged blade and then, modify the shape during the process ?

Yes in past experience this technique of releasing tension evenly through sharpening in both Honyaki and clad steel knives has worked

What kind of binder are the stones made out of? It doesn't look like standard resin. And do the diamonds easily pull out ? And during sharpening do you use pressure or not?

About the making of the stone and material out of respect to the maker’s request he has asked us not to disclose this information. I have not experienced that the diamonds easily come out during sharpening, depending on the soft cladding type there can be the odd pulling out from the cladding but this is rare and can be solved when switching diamond stone series and hardness and I’ve only experienced this at 200 grit mainly on low quality stainless cladding I tend to use a lot of pressure during the rough sharpening stages then taper off my pressure as I move into higher grits, settling around a medium to medium light pressure past 1k

@@ivanyuka-japan thank you there are so many videos on KZfaq on how to sharpen a knife but I get confused with so much information and you can't be sure if everything is accurate, I would love to learn from Ivan who has a knife sharpening experience of decade's

What an incredible view out of all your windows. The colour of the forest on those hills is stunning. Are these knives wide bevel, or is there some concave shaping to be done later?

Thank you! Yes it is beautiful! These are wide bevel with a subtle convex to the edge.

Are the bevels convex or flat?

The bevel is flat to convex, it works well for this knife
