Steakhouse pumpernickel bread! It was a perfect add to our fried chicken dinner! Here's the ingredients. Baker's spray (2)9x5 loaf pans and set aside.
2 ½ cups all-purpose flour
2 cups(10oz/282g) whole wheat flour
2 tbsp cocoa
5 tsp instant dry yeast
1 tbsp sugar
1 tbsp salt
1 ½ cup warm water 105-115 degrees
½ cup molasses
2 tbsp vegetable oil
In a medium bowl add all the dry ingredients: both flours, cocoa powder, yeast, sugar, and salt. Whisk together.
In another medium bowl mix the warm water, molasses, and oil together. Pour both mixes into your mixing bowl. You can kneed these together until your dough is combined, or allow your mixer to do the job for you.
Knead the dough until it is smooth and no longer sticky, roughly 6-8 minutes. You can do this by hand or use a stand mixer.
Grease a bowl with a little oil and place in the dough. Cover the dough and allow to rise until it has doubled in size, roughly 60-90 minutes.
After proofing, knock back the dough before shaping into 2 loaves and placing in your prepared loaf pans. You can cut the dough with a bench scraper or serated knife. Cover again and place in a warm place till doubled, roughly 45 minutes.
Preheat oven to 375 degrees, Do not over bake the bread will be hard and dense.
Bake for about 40 minutes. The dough should sound hollow once tapped on the base.
Cool on a rack before slicing. Serve with soften butter, its so good y'all!
