It could be argued that capuccino machine is a more accurate name. While the steam wand is somewhat essential in making a capuccino, it is not at all in making an espresso.

I appreciate the video and nice to see the side by side, and keeping an open mind! I take back my snarky comment yesterday about coffee people being the worst 😂. You have a new subscriber and fan! Also: at that restaurant they have one dedicated egg wand and a separate wand for steaming milk. They clean the egg wand after each use and it looks to be a pretty high-skill job.

Exactly! There are people who are really sensitive to the smell of eggs, and would probably notice a clear oddity in the next 10-20 drinks out of that wand, maybe even more.

I once worked for a customer who had a combined coffee and soup machine. You pressed a button and the machine mixed powder from the appropriate cartridge with hot water and poured it into your cup. The problem was that this machine only had one mixing unit and no automatic rinse cycle. If you wanted a latte macchiato and the colleague in front of you had an onion soup you got your latte macchiato with onion soup aroma amd sometimes even with one or two croutons.

I actually work at a coffee shop where we serve eggs this way! I'm vegan so I've never tried them myself, but the way I see it, the texture isn't as important as it's a fast and easy way for a small coffee shop to serve hot breakfast to customers. All you need is a toaster and some toppings and you can have a whole breakfast menu without a kitchen! We do have to work hard to keep the steam wand clean but as long as you wipe it down immediately afterwards it's not much of an issue. We also have one steam wand for milk and one for eggs, but on busy days there can be some crossover. I've been working there for over two years and we've never had any egg related issues with the steam wands.

Funnily enough I worked at a coffee shop where this was our daily routine. We had one steam wand on the linear PB for milk and one purely for eggs. Primarily the goal was to cut down the kitchen equipment and time needed. Second though cleaning the wand incredibly well was key. We used a dash of cream in the recipe and I can’t lie it was a great great way of scrambling eggs

Zanzibar’s Coffee Adventure in Des Moines Iowa has been serving steamwand eggs to great acclaim since the early 1990s. What’s important to remember here is that it allows a coffee shop to serve a more complete breakfast menu without a kitchen. Zanzibar opened, with their roaster dominating the footprint of the shop, at a time when coffee shop meant a place where you have eggs and pancakes for breakfast and the coffee hasn’t been sitting on the Bunn quite long enough to burn. Making this at home may be kind of silly, but they definitely solve a business problem.

Steamed eggs are _really_ popular around the world, just not with a steam wand. Most recipes for steamed eggs call for eggs beaten with stock steamed in a bowl in a steamer, and that results in a kind of savory custard. Another variety is a recipe from Korea that places egg beaten with stock in an earthenware bowl and heating the bowl directly. The excess moisture boiling away creates an airy and moist texture similar to what is achieved with a steaming wand.

The café I went to while I was at college made them like that all the time and that was about 30 years ago and yes they used a mug the main benefit is speed particularly in a very busy café, there's no possible way it could damage your machine.

I've been doing this for years, it is *so* quick. The biggie is when you are running a little cafe you dont need an extra hob. The side effect is people come back because they get their scrambled eggs really fast and they are always soft and fluffy.

I once worked a coffee shop where we we used the espresso machine steam wand to cook the scrambled eggs for our breakfast burritos. Mostly because there were no burners to cook the eggs on. They turned out great!

Hey James, when I'm feeling particularly lazy, I cook my scrambled eggs in a coffee cup in the microwave. 1. Grease cup with butter. 2. Whisk 2 eggs. Add salt & pepper to taste. 3. Drop maybe a cubic cm of cheese. 4. Pop in the microwave on high for 1.5-2 minutes, depending on how runny I want my eggs. 5. Make coffee. Then I'd just clean the cup with hot water.

One of our local cafes does all their eggs this way! They do have a designated steam wand, and from what I can see, they take very good care of the machine.

Ha! This video really brought back memories. We used to do this in the cafe where I worked in the 1980's. We used frothing pitchers just like like you and yeah, cleaning the steam wand immediately was an absolute must, or else! Definitely the lightest, fluffiest scrambled eggs I've tried, but being a fan of the hard scramble, it was more a novelty for me than anything else.

A sandwich place I worked at used to really do this. The eggs honestly came out super fluffy and creaming within 20 seconds flat... But honestly, I was so skepticle in the beginning but long as you clean it well, it turns out well

Tried this today, eggs, salt, pepper, chopped onion, bit of milk. Placed on toast, it tasted great, light and fluffy, melt in the mouth. Very different to the rubberised egg I used to eat :)

So I actually worked in a cafe that used to do this. First observation I can make: cleaning the steam wand immediately is absolutely mandatory. You do NOT want to clean up the mess it leaves if it sets, I can assure you. You can actually get a decent quality scramble egg this way, very consistently too. Yes the margin of error is small, but it's pretty easy to learn. Another benefit is it that the process is much faster than cooking in the pan. This is great during busy periods. I think though that ultimately there is no comparison to what you can achieve in a pan. For me, scrambled eggs in a pan will always beat the texture you get from a steam wand. Especially when you can take your time and really take care of your eggs.

I worked at a cafe that makes these. There is a finesse to make it proper. Once the eggs starts to cook, you don’t want to move it too much otherwise it starts to collapse and get watery. You then start to swirl in an upward motion. You can build a fluffy pancake mound.

Eggs aside, I have used the steam from my machine to do lots of things... deep clean my metal watch bands, textured jewelry and eyeglasses. Also, to remove sticky labels and as a quick way to get the humidity up in the air and the static electricity out of a very dry hotel room. I have once used it to quickly heat only the metal lid that was stuck tight on a jar. Believe it or not, I have even used it to froth milk for coffee as well!

Slightly related, a nice way to do sunny side up eggs is get them started normally then add about a tablespoon of water directly to the hot surface of your frying pan. Then cover immediately to create a steam chamber. This finishes the top of the eggs quite nicely.
