Gabe, when your cutting filet as you cut towards the tail stop just short of cutting the filet loose at the tail. Then flip the meat over and use the tail to hold it as you do the final trim. This is the way I was taught by my Father in Louisiana . Makes filet cutting much easier. Love your videos and of course Kelly’s and your brothers, keep up the great work. 👍

Best bait for a big hammer is their favorite food..that sting ray...best bait for a big tiger is a half of about a 20lb jack fish( because their favorite food would be illegal to use). Use a big circle hook to better the chance of not gut hooking them. Been tagging sharks sence I was about 10 yrs old. Biggest one so far was a tiger 11'9 estimated almost 900 lbs off the beach here in Texas. Don't get to fish for them much anymore but still love it. Big thing about catching hammers is to get them in and turned loose as soon as you possibly can. They like long hard runs. They are lean fish and actually die on the hook from Lactic acid build up pretty easly.

I was working at chickfila and they don’t make the sandwiches with pickle juice. They dip them in the egg and milk and then they bread them and they cook them in a pressure cooker. What they do is put 2 pickle slices on the bottom of the sandwich. That is where the pickle taste comes from.

I tried this fish dish with my twist today and it was lovely. I used pollock, Sriracha instead of Kimchi and served on brioche buns with square cheese, tartare sauce and sweet pickled peppers. Thanks Gabe.

If you soak the ray in buttermilk or 7up overnight it will not have the taste and texture that the kids don't like cooked them up to almost 100 lbs one of my favorite saltwater fish ,love your videos

Well that’s the problem with using common names (or regional names) rather than genus & species names. Where I live on the west coast, sand fleas are also called beach fleas or sand hoppers and they’re an amphipod in the genus Megalorchestia, and you’ll usually find them hiding in piles of washed-up kelp. The things that you call sand fleas are a decapod also called Mole Crabs or Sand Crabs and are the genus Emerita, and bury themselves in the wet sand of the swash zone. Very different beasts who look and behave very differently. Until I saw you catching them, I had never seen a Mole Crab before. And THAT is your lecture of the day. Hope you're not offended, because I really LOVE your videos!
