Today, we are making chicken stir fry Vermicelli Noodles with napa cabbage. It is a popular recipe from North East Chinese cuisine. In this video, I will use the sour cabbage that I made not so long ago as a key ingredient. The little fermented touch brings the dish to a different level and I am sure you will like it.
INGREDIENTS
150 grams of sweet potato starch noodles (Amazon Link - geni.us/omEXRHO)
1/2 tbsp of dark soy sauce (Amazon Link - geni.us/VQK67)
1/2 tbsp of vegetable oil to coat the noodles (Amazon Link - geni.us/MQylwN)
200 grams of fermented sour cabbage Click this link to learn how to make it
150 grams of chicken breast sliced into strips, marinade with pickled brine and cornstarch.
1/2 tbsp of soy sauce to marinade the chicken (Amazon Link - geni.us/SPrTz6c)
1/2 tbsp of sour cabbage pickling brine
1 tsp of cornstarch (Amazon Link - geni.us/47yEFX)
1 tsp of ginger finely diced
3 cloves of garlic sliced thinly
5-6 pieces of dried red chilies, seeded (Amazon Link - geni.us/KXgD8)
3 scallions separate the green and white part
30 grams of carrot julienned
1/2 of green chili sliced thinly
1 red chilies sliced thinly
2.5 tbsp of soy sauce to make the sauce (Amazon Link - geni.us/SPrTz6c)
1 tbsp of soybean paste (Amazon Link - geni.us/WO0y)
2-3 tbsp of cooking oil
1 tbsp of Chinese cooking wine (Amazon Link - geni.us/MrdpnMq)
1 tbsp of sesame oil
INSTRUCTIONS
Cut the sweet potato starch noodles into 6-inch-long pieces. Simmer the noodles for 4-5 minutes or until the noodles are soft but slightly undercooked.
Drain the noodles completely. Rinse them will cold running water to stop the cooking process. Mix the noodles with 1/2 tbsp of dark soy sauce and a drizzle of vegetable oil. Put that aside.
Slice it into 1/3 of an inch wide strips.
Cut 150 grams of chicken into strips. Marinade it with 1 tsp of cornstarch, 1/2 tbsp of soy sauce, and 1/2 tbsp of the pickling juice from the sour cabbage. Let it sit for 10 minutes.
Finely dice it 1 tsp of ginger.
Slice 3 cloves of garlic thinly.
Separate the white and green parts of the scallion. Roughly diced the white part, we will use that for the stir fry. Cut the green part into 1-inch-long pieces. Reserve it on the side
Cut open 5-6 pieces of dried red chilies and remove the seeds.
Slice one red chili and 1/2 of a green chili with a 45 angle.
Julienne 30 grams of carrot.
Before cooking, quickly mix 2.5 tbsp of soy sauce and 1 tbsp of soybean paste together.
Heat your wok until it is smoking-hot. Add 2-3 tbsp of cooking oil and toss in the chicken. In about 30 seconds, the chicken should be halfway cooked. Toss in the garlic, ginger, dried red chilies, and the white part of the scallion. Stir until they are fragrant.
Drizzle in 1 tbsp of Chinese cooking wine from the side of the wok. Throw in the sour cabbage. Stir for a minute. Push everything to the side and add in the noodles along with the sauce. Continue to mix until the noodles absorb the flavors.
Add in the chilies, carrot, the green part of the scallion. Keep cooking until the vegetables are a bit soft. Turn off the heat. Add a drizzle of sesame oil. Give it a final toss and you are done.

I made this because I had a wombok cabbage going sad in fridge. All the other ingredients except for chicken I already had. it was such a satisfying dish due the velveting technique of the meat, amazingly tender, and the use of red miso paste in the sauce. The dried chillies I used were guachillo, and they were so aromatic yet mild even the chilli averse at my table were cheering. Thanks Mandy, your recipe saved the day and a less than perfect condition wombok.

Sauerkraut (as long as it isn't highly spiced with juniper or caraway) would be better. The Chinese fermented cabbage and Sauerkraut essentially only differ with the type of cabbage used (standard green cabbage v. Napa cabbage)

I received my new wok last week and tried a recipe with bacon as the first ingredient. Unfortunately, on the one side it stuck to the wok, the other side was good. I followed the cleaning instructions and it turned out good. Can’t wait to try my next recipe.

The chillies she uses in the video aren't the spicy kind. I've eaten those kinds before, they taste like bell peppers. They're mainly used for colour than for heat

Actually, Chinese vermicelli noodles are not the same as cellophane or glass noodles. Vermicelli is made from rice while cellophane/glass noodles are made of starch. Vermicelli noodles, when cooked turn white while cellophane/glass noodles turn semi-transparent and look glassy

Vermicelli is simply a pasta variety like spaghetti or ravioli. They’re called glass noodles because it’s made of sweet potato and not wheat so it gives them a clear look

I'm curious as to why its called vermicelli. I've seen Italian pasta called vermicelli, basically thin spaghetti, but when I've seen it in Asian restaurants I'm wary about what type of pasta I'll be getting. Does anyone know why that name is used and how to be sure you're getting the correct style of noodles?

I think it refers to the thin round shape of the noodles. You should look for Japchae, cellophane or glass noodles (just different names). Avoid rice vermicelli for this recipe, they soften much faster and won't hold up in a stir fry.

The word "vermicelli" is an Italian word literally meaning "small worms", which of course relates to the particular form and texture of this kind of noodles (soft, thin and kind of slippery!). Greetings from Italy!

@@Cc-dk3rd I knew it was Italian, I'm just wondering if there's a reason that name is being used for Asian style noodles. When I see vermicelli I think of the Italian style pasta and it just seems like a confusing choice to use the same name for different styles of pasta. Like you never see "linguine" used to refer to Asian style noodles of a similar shape. Maybe there isn't a reason and I'm over thinking this.

Looks really delicious... Dont know where to get all those ingredients.. Here in south africa.. Is the sweet potato noodles.. Wheatfree..?
