I mean, the chopstick thing is what I've been doing for years. Yeah, it's probably not a problem if you're cooking one grilled cheese and piping it straight into your mouth while you cook a second one, but if you're cooking a whole family meal and sending plates all at the same time, the steam does make it kind of soggy on one side. Using a single chopstick works pretty good too, and since you're not sticking them into food it takes twenty seconds to clean them all.

I appreciate that you think of this. I do too. But I just make sure I always flip it onto the plate so that the less-hot side is down, and I never have a problem. It only gets wet like that if you slide it off the spatula onto the plate (meaning the side that was just touching the pan is now touching the plate). Hot side up to serve!

Take the bread product(s), halve them, then cut into sections. Deeply soak in milk & put in frying butter. Turn the pieces over until fried (process depends on how you like them cooked). I throw it high into the air while athletically pulling off my pants and flipping into a handstand in one deft move. As the crisp golden brown morsel floats down, aimed directly at my now open air, undulating balloon knot. Just as it’s about to grease my taint I let out the squeakiest, most powerful gas ever seen. The grilled cheese is suspended just above my spread cheeks, floating elegantly upon my purposeful, staccato like flatulence. There it dances for what seems like an eternity, barraged by my sputtering, resolute wind. The blood gathering in my head, eyes red with intense determination, a smile begins to form in the corner of my mouth as I know I’m moments away from having the perfectly crisp, never soggy grilled cheese sandwich.

My grandmother avoids this by increasing the carcinogens by cooking it until it's black on both sides. Just the other night, instead of taking the last ones off the pan while we ate, she left them in the pan, still on the coil that was used so it keeps burning them even more while we eat. All those wood and bamboo cutting boards, paper plates and paper towels, etc, still insists on burning the sandwiches.

If you make the "new style" Grilled Cheese, you won't have this soggy issue. Instead of using butter, use cheese as the butter. Make sure you use a good non-stick pan. The exterior cooked cheese doesn't get soggy, PLUS you'll eat it so fast, there's no time for it to get soggy.
