Strawberry Pizza for Two combines the sweetness of fresh strawberries with the rich creaminess of a decadent cream cheese layer, all atop a delectable cookie crust. It's our family's favorite strawberry dessert.

Ingredients for Strawberry Pizza:
Strawberry Glaze Layer:
1/2 up mashed or pureed strawberries
2 Tbsp sugar
1/2 Tbsp cornstarch
Sugar Cookie Layer:
1/2 cup flour
2 Tbsp powdered sugar
1/4 cup salted butter, softened
Cream Cheese layer:
4 oz. cream cheese, softened
1/ 4 tsp vanilla extract
1/4 cup sugar
Garnish:
5-6 strawberries for top
Directions:
Strawberry Glaze:
In a small sauce pan combine mashed strawberries, sugar and cornstarch. Mix to combine.
Place over medium heat and bring to a boil, allow to low boil until thick and glossy, about 5 minutes. Stir continously.
Allow to cool.
Cookie Crust:
In a medium size bowl combine 1/2 cup flour, powdered sugar and softened butter.
With an electric hand mixer, mix until all the butter and sugar are incorporated, it will look dry.
Use your hands to bring the dough together, if it is still too dry, add some water a teaspoon at a time until the dough comes together in your hands.
Roll. out on a floured piece of parchment paper, about 1/8 inch - 1/4 inch thick.
Bake at 350 degrees F for 12-15 minutes until golden brown on the bottom and just starting to brown around the edges. Cool before adding cream cheese layer.
Cream Cheese layer:
In a medium size bowl, combine cream cheese, vanilla extract and sugar. With an electric hand mixer, beat until smooth.
How to Assemble Strawberry Pizza:
Spread cream cheese layer over cooled cookie crust.
Add cooled strawberry glaze and spread into an even layer
Slice strawberries and place in a single layer over strawberry glaze.
