It does work. If you notice in the video at about the 1:10 mark, the mortar bed rises above the 2"x4" (right where the banner text, "1/4" per foot" is located). The issue with linear drains is if you install them perpendicular to the entry, you will have a lip at some point in your installation (just as the video shows). There are transition pieces to account for that, if you want to go that way. The best solution is to set the drain parallel to the entry. That way the pitch is consistent at the entry and slopes toward the drain. If you don't have enough drop in your floor to put the drain at the back of your shower, you can put it in the middle of the shower area and split the required rise in half.

The blue sheet membrane is the water proofing. It's a CPC membrane just like chloraloy or any other PVC liner. Like the video shows, the membrane gets bonded to the sloped mortar bed and the drain flange and then gets mechanically clamped to the drain body. So water that penetrates the grout or tile will hit the waterproof membrane and run into the drain.
