⭐️ It is a modern healthy recipe you can make for an easy dinner with your family and friends. It's without meat and suitable for vegetarians and vegans.
⭐️ Ingredients
FOR ROASTING THE EGGPLANT
2 medium globe eggplants
1 tablespoon extra virgin olive oil
⅓ teaspoon salt
¼ teaspoon black pepper
⅓ teaspoon thyme fresh or dry
FOR STUFFING #1
1 cup mozzarella shredded or grated
3 cups cherry tomatoes cut in quarters
½ tablespoon extra virgin olive oil
1 clove garlic
½ teaspoon salt
¼ teaspoon black pepper
15 fresh basil leaves
8 tablespoons vegan basil pesto
1 tablespoon toasted pine nuts optional

Eggplant is hands down one of the best ingredients you can have in your kitchen. As an Eastern Mediterranean from Syria, IMO I can say that every dish that has eggplant in it can easily be one of best Mediterranean food.

I’m learning super fast, lots of ways to prepare eggplant. So far all have been simple and delicious. I have a big garden every year. This year a nursery gifted me 24 eggplant. 12 traditional and 12 of the long purple Chinese eggplant. I then potted and gifted 6 and planted the remaining 18 in the garden. They are super happy and productive plants. I can’t keep up so I’ve been gifting a lot of the fruit as well as eating it on the regular now. Thanks for these recipes. They also look super easy and delicious

Love, love eggplant. Underrated veggie. Grew up with it as my parents made it fried and also caponata. The house smelled of vinegar, garlic and cooked eggplant. YUM! No more fried for me but do miss it. Thank you for sharing.

So many great ways to prepare, that fried doesn’t really need to be missed. I absolutely love grilling them. I do 75-80% of my cooking and baking outdoors, year round, anyways. The eggplant are producing like crazy and are hard to keep up with this year.

I’m so lucky and blessed to have found this channel because I’ve been making eggplant for years and usually it’s fried with different types of cheeses and tomatoes. Thank God I seen a non-fried eggplant recipe. That looks good and delicious. I am using my ninja foodie with the air fryer setting because this is the dead of summer and it is hottest fish. Lots of non fried eggplant recipes to enjoy. Keep looking. You’ll find more. I love grilling them. We’re currently harvesting so many per week. They don’t stay fresh as long after harvesting as other veggies do, like say summer squash. So we are either gifting or eating (both) within a couple days of harvesting, and we’re harvesting quite a few a couple times a week (18 of them in the garden. So many)

I jus made this served greek yoghurt with chopped mjnt. My husband loved it n my mother in law died with jealousy lol. For the cheese i added mozzarella cheese and added chilli flakes Italian herbs and parsley.
