I used about 1 inch thick pork loins you can use bone in pork chops.
Season both sides of the pork before you start your stuffing.
Make your stuffing, Toast 6 slices of bread in toaster, cut into 1 inch cubes. Put cubed bread in oven safe bowl or pan and dry bread some more on 200 degrees while you are simmering the onions and celery in butter.
Chop celery and dice up onions. Then melt 3/4th of a stick of butter in a skillet I used an 8 in round cast iron, then ad onions and celery simmer on low for about 10 min. Stirring occasional, when veggies are getting soft then you can ad 3 cloves garlic, (less or non if you do not like) ad one teaspoon of Italian seasoning. Simmer for another 10 min. In this video's stuffing In a separate pot I heated up 2 cups of water and added 3 chicken flavored bullion cubes.
Time to put together. In a mixing bowl put your bread fold in your butter mixture, Then ad one cup of the chicken broth and fold to mix. If you feel you need more broth ad some more. I used a cup and a half. Then place towel over bowl let steam for 5 min. Ad one teaspoon bell seasoning and fold that in. Stuffing is done, ready to be stuffed into pork that you made pockets in.
Sear both sides of pork 3 min per side.
Bake in 350 degree oven for 30 min or until pork is done.
