If I’m not mistaken mach diamonds form when the pressure isn’t optimum from the shape of the nozzle I.e inefficiency

Someone posted a link to this video to the rocketry discord I’m on. It was noted that the nozzle extension used for TVC was overexpanded, which is why for a given deflection angle, the thrust vector didn’t appear to change yo the same degree. You’d likely be better off not using a nozzle extension, possibly just a straight tube that has the same inner diameter as the main nozzle’s exit. This would work with your current setup. It was discussed that thrust vanes would be more efficient at this scale, but you’d have to modify your setup from 2 servos to 4 servos. The upshot would be the capability to do roll control.

That's right. In fact, in the previous CFD simulation, the deflection angle was basically consistent with the thrust vector angle, but due to some reasons, the actual working pressure is lower than the design pressure, which leads to over expansion, making the thrust vector angle less than the deflection angle
