I found a crock pot recipe with a cup and a half of steel cut oats, apple slices, 1/2 tsp Ceylon cinnamon, 3 1/2 cups of water. Be sure and spray the small crockpot with cooking spray first. Mix all and cook on low for 8 hrs in small crock pot. I have done this 2 times now and have enough oats for at least 4 breakfasts! Delicious! I use stevia for sweetner.

That was a picture of rolled oats not steel cut. I also treat steel cut oats like grits in respect to cooking with water and adding some olive oil, salt, pepper, cumin and diced onion, mushrooms and asparagus. Goes well with side of eggs. I use 1/4 cup organic steel cut oats , Walmart brand. I’m not diabetic but my understanding is that steel cut oats are lower glycemic because all the fiber from the husk is still there and not processed out.

My wife (who is not diabetic) and I make a mix to give oatmeal added flavour. We mix raw sunflower seeds, raw pumpkin seeds, crushed almonds, ground flax, and chia seeds every few weeks. Sprinkle two teaspoons over the oatmeal. If you like you can substitute pecans or walnuts for the almonds if you like. This also helps bland high fiber low GI cereals like Post Wheat 'N Bran Shredded Wheat.

Love making overnight oats, but admittedly use quick oats instead of steel cut. I do use steel cut if on the stovetop tho. It's really good to make with licorice root, cloves and star anise steeped in water and a splash of milk. I read somewhere that licorice root and star anise can have anti diabetic effects. I'm not sure if I use enough to do much, but it does give a nice and natural sweet taste without adding sugar or sugar alternatives.

I use steel cut oats in place of rice. So I make them savory with salt, and then top them with stir fried chicken or fish with onions, garlic, ginger, mushrooms, leafy greens or cruciferous veggies, and Szechuan chili oil. I keep the portion size to ⅛ cup uncooked, and only have them 2-3 times a month.

I did read that if you cook starchy foods the day before you want to eat them and store in the fridge overnight it can reduce the starch content by 20%.

Love your health advice! you are a very good vlogger. An instant pot can cook steel cut oats and works great. If you are new to an instant pot, try the instructors, Pressure luck cooking or Amy & Jacky for instructions. You will love them, and you will like steel cut oats.

Tip on getting steel cut oats, soft enough to eat, and lowering the cooking time: Put the oatmeal and water in a microwave safe bowl, the night before, cover with plastic wrap, and microwave just long enough to get the water hot. Then let it set overnight. Greatly reduces the cooking time, the next morning, and you can finish it in the microwave. And in general, adding a bit of another cereal grain, will give you a more complete amino acid chain.
