Using homemade gyoza wrappers we made previously, we are making boiled Sui-Gyoza with lots of shrimp. The aroma of the shrimp rises from the gooey wrappers. The homemade Sui-Gyoza is so delicious!
How to make Sui Gyoza

(2 people (12 pieces for 2 people)) Cook Time: 30 minutes
* Time for making gyoza wrappers is not included in cook time.
[Meat Mixture and Wrappers]
30g Ground Pork (1.1 oz)
100g Shrimp (3.5 oz) - net weight
1/8 tsp Salt
1 tsp Sake
1 tsp Oyster Sauce
1 tsp Ginger Root, grated
1/2 tsp Sesame Oil
1 tsp Potato Starch
20g Garlic Chives, chopped (0.7 oz)
2 tbsp Long Green Onion, chopped
12 Gyoza Wrappers
[Sauce]
1 tbsp Soy Sauce
1~2 tbsp Vinegar
1 tsp Sugar
[Optional Ingredients for Sauce]
Doubanjiang - Chili Bean Paste
Ginger Root, grated
Garlic, grated
Garlic Chives, chopped
Coriander Leaves, chopped
* 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

The homemade dumplings are so delicious! The aroma of the shrimp rises from the gooey wrappers. Alternatively, you can make the gyoza using only pork or use scallops instead of the shrimp. You can also make delicious pan-fried gyoza. :) Add hot water in a pan until the gyoza are halfway submerged and cook them with a lid until browned. i've been watching your videos since 2009 and i never made any of your food. i just enjoy watching you preparing the food. sometimes i'll eat instant noodles or other cheap stuffs while watching your videos and imagining having the food that you preparing.

You should try some of the simpler recipes...I could not cook when I started watching these...now, everyone loves my cooking..The lessons you learn here, carry over into all styles of cooking....also it helps if you eat good food, so that you can tell when it is "high style" cooking and when it is shit.

I usually made like 100-200 dumplings (all kidns of fillings from shiitake mushroom to standard cabbage and pork)with my mom and grandmom together. We use a more 'squeeze' approach to make the dumpling since it is faster to make them. and for cooking, my family simply add some cold water into boiling water twice (boil, add water, boil again, add again) rather than using a timer. frozen dumplings need 3-4 times of adding water.

I made these toight for my dinner, and they were absolutely delicious. The gooey texture of the gyoza wrapper and the firm tastey filling were lovely with the dipping sauce. Although I lacked the skill to make them look good, they still tasted great - not bad for an English girl!!! Thank you for sharing this recipe! x

FYI, you could use anything you want as filling. There're a couple of combos used in Chinese cooking: pork+chive, pork+cabbage, chicken+shitake, lamb+carrot and fishball. But technically you could try any combo with your choice of spices. You could use bacon+cheese curd if you want to.

It is, the name is Sop Pangsit Jepara, it is a variation of chinese wonton soup (in english speaking countries.) with local twist.

Would these be better made using a clear soup base instead of the boiling water?

Cooking any kind of dough (from pasta to dumplings) releases starch into the cooking water and unlike store bought it will have some lose flour on the surface that also gets in the water. So if you use a clear broth, it will certainly enhance the taste, but the broth won't me clear anymore and it will slightly alter the taste. It depends of course on how many pieces you intend to cook and how much broth you use. The more liquid the more extruding flour and starch are diluted.

If you spread beaten eggs on the edges, and you boil the the dumplings, no holes will open between the folds. Is that true?

i wouldn't use an egg wash if you're gonna boil the dumplings. the wrappers should be sticky enough that there wouldn't be any holes if you squeeze it tight enough

Just use cold water. Dampen your finger with the water and draw around the edge of the wrapper. It will hold more tightly.

it would be pronounced, "kata" in this context, that is, if you're talking about the title? 方 is a part of 作り方, which means "recipe(tsukurikata)", as it's a noun suffix in this context.

Yes! :) But the homemade wrappers are thicker than packaged ones. To avoid under-cooking, add water to a pan until the gyoza are halfway submerged and cook them with a lid until browned. Raphael Thoulouze

*美味しそうです If you want to say "it looks (delicious)" with an い-adjective, you need to drop the final い before adding そう. It's also と一緒に instead of に一緒に. And 作る instead of する when talking about cooking. The last sentence is a bit off in general actually...

No pork?? Pork is delicious! Bacon, ham, pepperoni, it's all so tasty! But if you insist on being foul and using fowl (hehe), you can use ground chicken or ground turkey. (like ground beef, but chicken or turkey)
