You do such appetizing videos ! Halawet al jibn is a Hama, Syria original. The Oriental Pastry in Brooklyn, NY make it the best-the famous Moustapha bakers ! Also if I may add since I love sweets; best Kanafee is made by Nablus Sweets in Paterson, NJ, best baklawa is Muhanna Sweets in Tulsa, OK and best maamoul with dates is Mansoura Bakery in Brooklyn-they also make great basbousa as well. Not sure if theirs is best as few bakeries make it . But their basbousa is delicious !

We love حلاوة الجبن، great recipe, thank you. I make it all the time and for filling I use ready to use ricotta cheese, In Syria it is commonly used as filling, we call it قريشة الحليب أو حليب مفرط

I have a question about stuffed grape leaves, I buy them from the Arab market in jars but for some reason no matter how long I cook them they are kinda chewy like they aren’t soft. Do the leaves vary? Are there specific types to look for? Maybe if you Can a video explaining g how to choose jar grape leaves would be great. 🙂

Hi Amal thanks for watching! Here in California we might be a bit spoiled, as grapes grow really well here and we save and freeze our fresh leaves to use all winter. I have never used the leaves out of the can tbh. I tend to like products from Ziyad, have you tried that brand before? Perhaps you can boil the leaves for a minute or two before using to tenderize them.

Dear Blanche: No self respecting real Italian will say "mozzarell"!! Usually, second generation American Italians will pronounce it that way, and furthermore, they would also say "Gabagool" instead of "Capicola", parmigian (Parmigiano), proshoot (instead of Prosciutto), etc Italians / those born in Italy will always say Mozzarella, Capicola, Prosciutto, etc. PS: Love your videos!

Great recipe! Very hard to make it right. Why do Italians leave off the last vowel? Unlike northern Italian, which has a syllable-timed rhythm to it and so vowel reduction does not occur, southern Italian tends more toward the stress-timed end of the spectrum. This means that its vowels which are not stressed are shortened and reduced, and may even (seem to) be dropped completely.

What do you think of pomegranite seeds to substitute for the rose petals?

Texture wise I am not sure that would work so well. To replace the original candied rose petals that are often used, I recommend slivers of any dried fruit you like.
