Susie's Mexican Almond Chicken

One of our most favourite dishes , we love Mexican food , some people think it will be hot and fiery but that is not the case this is creamy and so tasty . It will keep for a couple of days covered in the fridge but you must make sure you heat it up correctly as the chicken must be hot all 5he way through it . The ground almonds give a lovely texture to the sauce and a richness , another easy yet delicious meal

This dish we have been eating for about 20 years and even the grandchildren love it 😂😂 . I love growing things just not that good at it , surprised how easy the chillies have been xxx

It has been a family favourite for a longtime , my granddaughter now makes it for her fiancé . It is quick if you use the mini fillets but if you use full chicken breasts it takes about 15 to 20 minutes longer . It freezers well too xxx

A random older video of you popped up and so I started a research because I loved it and I want to learn more then saw you look so different what have you done? You look amazing. I am here trying to learn to cook healthier

This made me chuckle 😂 we have a new camera that is a lot better , but some days I look really old , I have a very stressful job and work an awful lot of hours , I am a very down to earth person and that’s why somedays I simply don’t look good 😂 . I believe we are as good as the food we eat !! I buy good meat but try and keep portions small and I believe the airfryer is a great start to healthier eating . I do drink a lot of water but I also enjoy my glass of wine when I get in from work . Everything in moderation and I play tennis which is good exercise, thanks for joining me xx

Yummy yummy yummy Susie as always. Never tried using nuts with chicken definitely worth a try, another one of your recipes when I am cooking again. As John doesn’t cook enjoying , different salads at the mo, mind you enough for what I want, hehe bless him. Hope your well snd family all ok. Xxx

We are okay Karen , hope you are ! More and more people are using almond flour and ground almonds , I love using them with chicken , this is a gorgeous recipe and a family favourite, so when you are stronger give it a try xxxx

@@cookingwithsusie yes thank you you enjoy your break to Italy, we love i Italy, lake Garda is very pretty and so peaceful , well it was when we went anyway. Yes I am doing ok thank you , this heat is really helping me however, I am struggling a bit with it to be honest. It’s definitely not helping with my legs swelling, shouldn’t complain however. Hehe. You will be in my thoughts for a lovely time away next week. We will see what tasty recipes you bring back with you. Be ideal to get your lemon liquor I rarely have a drunk if it but it dies into many desserts. Hehe naughty but nice. No drinking for me just at the mo. Xx

@karentoynton8948 the heat has been extreme this week , classic Uk we go from cold and wet to scorching hot 😂. We bought a small aircon unit 2 years ago for Paiges room thank goodness and although it is noisy it keeps the room at a comfortable 22 and home with instead of 30 which it got up to before we bought the unit . I came home with puffy ankles today !! All due to the heat . I have been enjoy a new tonic water from fever tree without the gin 😂 it is a clementine tonic and I keep a bottle in the fridge for night duty and it is delicious. I will let you know how Italy goes when I get back , just look after yourself xxx
