For Samosa:
For Dough
1-1/2 cup Maida
1-1/2 tsp semolina
1 tbsp carom seeds
2 tsp ghee
salt as required
water as per requirement
For Stuffing
4 tsp oil
1 tsp ginger paste
2 tsp green chilli paste
1/4 tsp asafoetida
2 tsp punjabi masala
1 tsp garam masala
1 tsp red chilli powder
5-6 boiled potatoes
1/4 boiled dry green peas
1/4 cup coriander [ chopped]
1/2 tbsp am chur powder
salt as required
oil [ for frying ]
1) Green chutney
1 cup coriander
5-6 green chillies
1/4 mint leaves
1 tbsp lemon juice
1 tbsp roasted peanuts powder/sev
1 tbsp garlic
2 tbsp curd
2 tbsp oil
1 tsp black salt
Salt to taste
2) Jaggery-Tamarind Chutney
1/2 cup Tamarind
1 cup jaggery
1 tbsp Chat Masala
2 tbsp Melon Seeds
1 tbsp Red Chilli Powder
2 tbsp Roasted Gram Powder
2 tsp dried ginger powder
1 tsp black salt
1 tsp fennel seeds
