Lets talk about EGGPLANT! This delicious recipe is another hunger-satisfying, easy dinner recipe that also happens to be VEGAN and AMMMMAAAZZZZIIIINNNNNGGGGG. Seriously though, on of the easiest instant pot meals you can make.

RECIPE:
serves 2-4
2 Eggplants cut into strips, dealers choice on thickness
2 Bell peppers, any color
1 Medium white Onion, loosely chopped
3 Cloves of garlic, diced
1/4 cup of green onion, chopped
1-2 thick slices of ginger
2-3 Tblsp of olive oil (or sesame if you have it)
Sesame seeds for garnish
any amount of rice, noodle, or plain!
The Sauce:
1 Tblsp of rice wine vinegar
1 Tblsp of sweet chili paste
2 Tblsp of Sriracha
1 Tblsp of Ketchup
3 Tblsp Soy Sauce
1 Tsp Chinese 5 Spice
