I just made pickled onions tonight but I used another recipe. Your garlic, mustard seed, peppercorn and bay leaf sound great for next time. They need to be used in a couple weeks though, maybe more if stored upside-down.

Yeah I usually say 2 months for best flavor. They will last a lot longer than a few weeks but after a while the flavor starts to change a bit

Thank you! So if you put them in the fridge unopened they will last a really long time. I had a jar in there Christmas to Christmas and it was fine for that full year. Results may vary but that’s my anecdotal example!

It’s just regular salt, but it’s made with no additives to it like anti caking stuff that can mess with your brine. Regular salt is fine

No such thing! If you wanted to ferment them you could, but I am already using vinegar so no need for the fermentation. These just go right in the fridge and get all their flavor from the brine:) I wonder what these would taste like fermented

Usually they will throw a red chili in there, but honestly it’s never that spicy it’s more vinegar-y. This is the recipe my grandmother would use 🤷🏽♂️

I want all of the stuff to be totally submerged under the liquid. I don’t want to buy actual weights and an onion has layers so you can use a cross section to accurately fit the diameter of the jar and hold everything without spending money! And since they aren’t going on the shelf, I don’t mind an organic weight because (in my experience) it doesn’t rot

That’s a great question…why I didn’t just say this in video I’ll never know. I just mix it myself, so usually I’ll do 1/4 cup of mustard seed and 2 teaspoons of black pepper corns. Id say if you don’t want to do a mix, just do a 1/4 to 1/2 tsp mustard seed and 3 or 4 pepper corns per jar

As long as you can hold off eating all of them:) jokes aside, I’ve had a jar in there sealed for a year and they were fine after that time, so do with that info what you will. I try to consume in a few months for best flavor

These are refrigerator only there is no “shelf” life. But if you keep them in the fridge, many many many months! If you can resist eating them for that long :)

Honestly this was more of a fridge dump than a real bolognese. But, generally speaking, I usually go with this. Start with the holy trinity, white onion, celery, carrot. 2:1:1 ratio. -1 cup diced white onion, 1/2 cup diced celery, 1/2 cup diced carrot. -2 tblsp extra virgin Olive oil -3 cloves garlic, sliced thin -1/2lb ground pork (or beef, or 1/4lb of both) -1/2 cup white wine -1, 28oz can crushed tomato -1 bay leaf -1/4 cup chopped basil -1/4 cup heavy cream Salt and pepper to taste Heat up a medium pot over medium heat. Add your olive oil, then your holy trinity. Sweat down your holy trinity until the onions are translucent, then add your garlic and cook for 1-2 minutes. Add in your meat, and season with salt and pepper, cook until pink is gone. Then add your white wine, and cook it until the alcohol has burned off, use your nose :) Then add in your can of tomato, mix everything, and bring it back up to a simmer. Add in your bay leaf, reduce the heat then cover and cook for 1-2hrs. After that time, uncover, add in your basil, and cook for an additional 30min to reduce it down a bit, then turn off the heat and add in your heavy cream. Make your favorite pasta and serve!! I know that’s long but I hope your enjoy :) I think that’s everything, I’m going straight from memory so I hope I didn’t forget anything.

Sure thing!!! This one is actually super easy so I’ll just post it here :) -1 cup all purpose flour -2 tsp salt ~1/2 cup boiling water -5 green onions, sliced. The entire thing including the greens You just add the boiling water to the flour, mix with a fork until it all starts to stick together and make 1 big ball. Cover it and let it sit for 30ish minutes. Spread some extra flour onto a flat surface and Using a rolling pin roll the dough out flat. You can keep adding flour until the dough doesn’t stick to the rolling pin. Once it’s flat, sprinkle in the green onion over half the dough, then fold in half. Roll it flat again then add more onion. Continue until you have no more green onion, roll it flat again and try to get it into a round shape. Heat up a pan over medium heat, add a tsp of Vegetable oil, and cook the bread until it’s nice and crispy on the outside, flip and repeat!!! For a sauce I mixed soy sauce and rice vinegar in a 1:1 and sprinkled some sesame seeds into it. Cut and ENJOY!!!
