Counterpoint: He knows how to prep ingredients. Which is a great set of skills to have, to be sure. But ... His crust was much too aggressively handled (and therefore too tough and too glutinous) and he doesn't seem like he completely understands why things are being done the way they are. Consider his brief apprehension about the cornstarch. It suggests that he's aware that it was a lot; but also that he doesn't know its purpose in the recipe. Nevertheless, his egg separation technique is better than hers; -- if only his egg _cracking_ technique were better.

This should be a separate production that isn't rushed and involve all the drama that comes with making dinner at home. That "There you go baby" at 4:37 threw her off soo much she started putting egg white in the yolk bowl.

This was great. I normally don't like cooking segments on talk shows because they are often too rushed. This was a very nice pace. Although I have mixed feelings about Alison Roman's cooking videos, I thought the chemistry between her and Colbert was perfect. How's that for a backhanded compliment.
