Jacques Pépin prepares a light and tasty menu starting with pea soup from scratch. Either fresh or frozen peas are fine to use, just make sure the fresh peas aren't too old. Jacques recommends serving this soup cold. For the main course, Jacques makes a flavorful crab ravioli with red pepper sauce and chive garnish. He pairs this with a batch of sauteed spinach with nutmeg on the side. An apricot and basil dessert rounds out the menu.

I love spinach but I never knew that nutmeg was a complimentary seasoning for it. I'm going to try it the next time I make spinach. I have always loved seafood stuffed ravioli but have been too intimidated to try making it. The crab ravioli looks delicious; I have to get over my fear of trying to make ravioli- LOL. I need to add more fruit to my diet. The Apricot & basil dessert looks great. As always, thanks for your wonderful recipes, Chef Pépin.

What does the mace taste like? Is it a lighter version of nutmeg?

Mace is the outer shell of nutmeg and the mace in bear mace. It's a fiery warmth as opposed to a comforting warmth.

I have to say that I would present the ravioli on top of the sauce so they could be seen better. I've made potstickers and I think the traditional frying and steaming technique would work better for these. But who am I to criticize Jacques Pepin?

I like seeing how easy it is to make your own foods! Homemade and from scratch Ravioli, soup, sauce, spinach, french fruit desert. I'm a Millennial, I knew this wasn't hard 🙄. My generation are such liars.

Those are wonton wrappers purchased at the store, as Chef Pepin explains. But it really takes less time to make them than to go to the store :-)
