The knife is Masakage Koishi Aogami Super (Blue Super) Gyuto 210mm HRC63+. This steel is not that easy to sharpen.
Debado MD #1000 Grid Whetstone is splash and go. My feedback tells me it feels like Cerax 1010. Still soft, but cuts ok. And it's pricy.
Debado MD #4000 Grid Whetstone is splash and go. This one is fairly hard. But working on Aogami Super is also ok. But it is very expensive one.

These two stones have been my primary workhorses for almost 2 years and they work so well that l have not even been tempted to try others in those grits. They also work very well for wide bevel and single bevel polishing.

Over all they are fine. But Suehiro is not good for single bevel surface.

Big and thick, can be used for a long time. Weakness is soft. Cutting is medium.

No. I would recommend LD if you stick to DEBADO.

Great video, thank you for it! As I understand, it's quite a lot time has passed since you got the stones. So, could you, please, help me with understanding Suehiro stone lines? I am going to move from my King to Suehiro. Some say - Cerax + Rika, some - Cerax new line. But I want Debado SNE, you use MD... What the difference between them? What would you recommend? Please, help me, master 😊

Hi, I think you can leave Cerax, new Cerax and Rika. Too soft. SNE is ok. LD is good. MD not recommanded after my tests. MD1000 is like Splash and Go Cerax 1010. Not hard enough.

Hi there! Yes, it is ok to sharpen by only one stone. It can be 800 grid, 1000 grid or even 2000 grid. Lower the grid you use, faster the knife gets dull.

Thanks for this video ! What do you mean by "professional use" ? Because i'm butcher (so i sharp my knives myself) and i'm looking for a better 1000grip. The Debado MD-100 will be fie my 56-58 Rockwell knives ? Thanks

This set might be a big soft for you. It's better for long knives so the width is advantage. But in your case, I think a harder stone is better. Go upto 6000 grid and then down to 1000-3000 grid to create micro zigzag on the edge. It's cuts much better.

I feel that Debado SNE #3000 and New Cerax #3000 are the same. Debado SNE is splash and go, New Cerax is soaking stone. DEBADO LD #4000 is better than MD #4000 indeed. LD #4000 is harder than SNE #3000.

Not exactly. New cerax cuts better and a bit harder.

Great video. I've been thinking about picking up this stone for a while (MD-100) and this was very helpful. Also, where did you get that plastic bin that you are using your stone bridge on? and does it have a specific name? I've been trying to find a similar bin to use for a while with no luck.

Suehiro LD is harder and better that MD according to my expenience. You can get a box 400 x 300 x 150mm (outter dims) for that bridge (Suehiro TDG-44). The bridge has certain working distance. Check before purchase. Using a strong bos working on table is much better for your waist than working on pool.

@@tailibaba Thank you for your help. The LD is another one I was looking at. One more question I'm looking at the Rika 5k and the debado MD or LD 4000 . I'm looking for a finishing stone on kitchen knives and an in between stone before I go to my 8000 Snow White stone.. Have you used any of these and what are your thoughts? Thank you in advance.

The Rika 5k is basically the only stone I finish with, not a totally mirror finish, but I’m not a fan of mirror finishes

What do you think about the king delux 1000 comper to the cerax 1000? I'v had the cerax 1000 for a long time and im very happy with it. But now im thinking of buying the king because its much cheaper What do you think?

Cuts slower, must be soaked, has nicer feeling to it. Those stones are similiar, the main difference is how You like to sharpen Your knives. I own King KDS and like it a lot, great value and S6000 mirror polish is superb. But the harder the blade, the slower the process.

I get two in Japan. One is longer version, which is good for working on pool. The other one is shorter and wider. Good for working on box.

Suehiro TDG-44. There's another one TDG-55 longer than this. But I like this better. It fits my box perfectly.

I am looking at replacing my chosera stones I love them but they are (cracked) I really liked the #800 #3000 #5000 (one fine crack) and #10000 (spider web cracking and split), how do the debado compare. I just care bring myself to buy another expensive stone and have it split or crack. Not sure about the bob kramer stones which are chosera formula but altered according to come.

Hi Francis, let me ask. How do you store your stones after use? It's very important for Naniwa Chosera. Debado LD is much better than Debado MD. After creating slurry by Atoma #400 diamond blade, Debado LD feels even better.

The debado SNE 1000, 3000 and 6000 are excellent stones. The 600 grit is softer and more muddy. I prefer the Cerax 700 grit even though its a soaking stone. The SNE are harder stones and the MD are supposedly softer and more friable. All of the debado and Cerax stones are vitrified and can be permanently soaked in water without fear of cracking. I don't know how they compare to the chosera in terms of speed or feedback. For me the cerax and debado SNE offer great feedback and cut fast enough. I use them in my sharpening business. For a finishing stone I really like the Sigma Power Select II 13k. Its a resin based stone. It leaves the best edge straight off the stone vs my other finishers, Arishiyama 6k, Kitayama 8k, Naniwa Superstones 8k 10k and 12k, Shapton Kuromaku 12k and Shapton glass 16k.

I mainly use 180 grid for chip fixing; 400 grid after 180 grid; 1000 grid after 400 grid; and then 3000 grid, 5000 or 6000 grid. Normally I stop here. Sometimes I stop at 3000 grid. Good enough. I barely use other grids to be honest.

Hello! It is. I feel like: MD#1000 is like Cerax 1010 but doesn't absorben any water. LD#1000 is much harder. MD#200 is softer. MD#4000 is no harder than LD#4000, but also cuts no better than LD#4000. But more expensive.

You are welcome. LD 1000 is super fine. Use it with mud slurry. Otherwise it's difficult to clean by hand. Metal particle stick to the stone. SNE is abrasive. But I don't like the holder. lol

LD and MD series are the same stone, just other dimensions. This has been confirmed by Suehiro. Perhaps @Tailibaba was sharpening knives with different steels when he tested the two series.

Hola pedazo de piedra de más de 3 kilos de peso un tanque se me van los ojos esa la tengo en mi lista desde hace 2 años suehiro debado md viene 220,1000,4000,grit que chula retiene bastante el agua eso es bueno porque no hay que remojar que es piedra de alta calidad y no se desgastara muy pronto por lo que debe come mucho acero por el color negro en la piedra es acero de todas formas yo recomiendo suehiro antes que king son de mejor calidad en todos sus precios un saludo
