Full written recipe for Thalipeeth
Prep time: 15-20 minutes
Cooking time: 6-7 minutes
Serves: 4-5 people
Ingredients:
GREEN CHILLI | हरी मिर्च 3-4 NOS.
GARLIC | लेहसुन 10-12 CLOVES
CUMIN SEEDS | जीरा 1/2 TSP
SALT | नमक A PINCH
JOWAR FLOUR | ज्वार का आटा 1 CUP
BAJRA FLOUR | बाजरे का आटा 1/2 CUP
GRAM FLOUR | बेसन 1/2 CUP
WHEAT FLOUR | गेहूं का आटा 1/4 CUP
RICE FLOUR | चावल का आटा 1/4 CUP
SALT | नमक TO TASTE
CORIANDER POWDER | धनिया पाउडर 1 TBSP
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP
ONION | प्याज़ 1 LARGE (CHOPPED)
FRESH CORIANDER | हरा धनिया A LARGE HANDFUL
WHITE SESAME SEEDS | सफेद तिल 1 TSP
WATER | पानी 3/4 - 1 CUP
OIL | तेल 1 TSP
GHEE | घी AS REQUIRED
Method:
Add the green chillies, garlic, cumin seeds & salt into a mortar or a mixer grinder jar & grind it into a coarse paste.
In a large bowl add all the flours along with salt, coriander powder, turmeric powder, kashmiri red chilli powder, chilli & garlic paste, onion, fresh coriander, white sesame seeds & mix well to combine all the dry ingredients.
Further add water gradually & bring all the dry flour together to form a semi-soft dough then continue to knead the dough for 3-4 minutes.
Add the oil on the dough & incorporate it into the dough by kneading for 2-3 more minutes, cover the dough with damp cloth let it rest for 5-10 minutes.
To cook the thalipeeth, set a tawa over high flame & let it get hot until you shape the thalipeeth.
You will require a flat platform & a muslin cloth to shape the thalipeeth.
Dip the cloth into water & squeeze out all the extra water, then plate the cloth on the platform.
Take a medium sized portion from the dough, form it into a roundel & then slightly press it to get an evenly sized thick disc.
Place the portioned dough onto the cloth, wet your hand & carefully press the dough & flatten it out into a semi thin chapati over the muslin cloth, if your hand starts to stick then dip it in water again & continue to shape the thalipeeth.
Then make 3-4 whole in the thalipeeth using your finger.
Once the tawa gets hot & you have shaped the thalipeeth, add some ghee on the tawa, then spread the ghee on the tawa by wiping it with a kitchen towel.
Lift the muslin cloth from one side & place it upside down on the tawa so that the thalipeeth sticks, then carefully peel off the muslin cloth from the top.
Add ghee in the holes & on the sides, then separate the thalipeeth from the tawa using a flat spatula, cover & cook over medium low flame for 2-3 minutes.
Further take the lid off, slip the thalipeeth & pour ghee in the holes & on the sides & cook for 2-3 minutes.
Your delicious & healthy thalipeeth is ready, serve hot along with some curd, pickle & white butter.

As a Maharashtrian i really thank you for bringing our marathi recipes to world podium. They are generally considered underrated and are always ignored by North Indian crowd because they are not that "chatpata" in taste. Marathi cuisine is minimalist yet healthy and good for gut health. I believe we have alot of chatpati dishes by the likes of Misal paav, Zunka, Varanfal i.e. Chakolya, katachi amti, curries made out of hirve waatan (green masala)..

It's not about region, it's about the diet being followed from birth what you eat, is the taste you will like. Even North Indian food is not liked by all people from other regions.

I m a North Indian. But have been staying in Maharashtra since the last 21 years. I have learnt to cook so many Maharashtrian dishes like pithla bhakri matki thali peeth etc. They all r so healthy and delicious. 😊

I am Gujarati but stayed a few years in Pune and therefore I prepare Peanut chutney, thecha, pitlah, Thali peeth, Misal etc sometimes and yes I agree that it is healthy and tasty. 😋

Thalipeeth finally getting the attention it deserves. Grateful to Chef Sanjyot for exploring it's potential. It's a healthy Maharashtrian recipe which is prepared in every Marathi household. So many varieties can be made with various vegetables like cucumber, cabbage or even an eggplant.

Here is another from our beloved Mahashtrian households ..... MISALPAV. It's so nice. And Puran poli comes out from them is outstanding though we Tamilians also prepare them. A month back one of my Maharashtraian friend brought poli made well dried to be eaten with hot tea to sustain for a month or so with groundnut filling instead of coconut, since she has brought it to Canada from her Mousi.😊 I am happy to say that I had lived in Mumbai for nearly 20 years and have shared cordial relationships with so many of them.

Traditionally bhajni flour for thalipeeth is prepared by dry roasting separately jawar, rice, chanadal or black chana, udid dal, moongdal, corriander seeds, cumin n methidana. The roasted ingredients are then mixed n ground. This can be stored for 2-3 months in airtight container. After that the flour starts losing the flavour so fresh flour can be prepared again. Alternatively, it can be made instantly as the chef has shown, by mixing ingredients. But thalipeeth made from bhajni (first method) is more flavourful. It is very tasty n healthy too. Even pizza can be made using thalipeeth as base.

आमच्या घरी फारच भंगार थालीपीठ तयार करतात, म्हणून मी पण मुद्दाम त्यामध्ये मोठे मोठे टमाट्याचे काप घालायला सांगतो की ऍट लिस्ट ते खाता तरी येते. आमच्याकडे थालीपीठ म्हणजे भाकरीपेक्षा कडक बनवतेत, असं वाटतं की पुढच्याच क्षणी एखादा दात तुटून बाहेर येतो की काय. बरं, आईला मुद्दामहून ही रेसिपी दाखवली तर माझ्यावरच भडकली, म्हणे एवढाच प्रॉब्लेम आहे तर उद्यापासून स्वतः स्वयंपाक करीत जा. 😅😅
