Even with me having almost 3 million gold I still find myself at times taking random items and selling them for extra coin.... like I need it.

Books for sure! In Oblivion it was barrels etc. because you don't have a "take all" button...

I think Winter hold would be interesting just for how many things there are in the college to steal, you would also need to go partly through the college quest line so you could go to the archmage's quarters but not own it

I know dude, I hate doing the bedlam jobs for Delvin. Sure it’s ‘only’ 500 Delvin, but in some of these cities I have to result to stealing food to get to that amount!!!

500 is pretty fine, the part where I had to quickload to get the radiant quest in Solitude was wayyy worse :( I heard Delvin saying the same lines over and over...

You may consider using I.M.P.S. to sell all items in a chest so it will tell you the value without needing to do any math

You could try binding the pick up/interact button (e) to scroll wheel so you can just scroll to pick everything up. Idk if it would work

Small tip if the books annoy you if you double tap the take button quick enough itll pick up the book without opening it
