The Art Of The Prime Rib: Mastering The Perfect Roast

Cooking Instructions:
Step 1: Assemble and/or trim your Prime-Rib(approximately 4+ lbs).
Step 2: Pre-Heat Oven to 275 degrees(Fahrenheit).
Step 3: Gather any oil or fat with a high temperature smoke point (preferably duck fat or beef tallow), and mix together with seasonings in a bowl(Salt,Pepper,Garlic).
Step 4: Apply seasoned oil or fat to all sides of the Prime Rib VERY GENEROUSLY
Step 5: Place Prime Rib on wire rack, and in the refrigerator for 30 minutes, or until the binder is firm.
Step 6: Set Meat Thermometer to 120 degrees(Fahrenheit) and place inside of the Prime Rib
Step 7: Assemble Charcoal in an outdoor grill and light(depending on if you use natural wood charcoal or charcoal briquettes, you may need to light your charcoal sooner)
Step 8: Place Prime Rib in the Oven, preferably on the bottom rack, take out once internal temperature reaches 120 degrees (Fahrenheit)
Step 9: After removing the Prime Rib from the oven, immediately place on the grill, over hot charcoals(Make sure charcoals are fully heated before placing Prime Rib on the grill)
Step 10: Sear Prime Rib on all sides until internal temperature reaches 130 degrees(Fahrenheit) or the crust of the steak is to your liking
Step 11: Let steak rest for 10-20 minutes, slice, and enjoy.
Ingredients:
Oil or Fat as binder( preferably duck fat or beef tallow)
Ground Kosher Salt
Ground Black pepper
Granulated Garlic(garlic powder)
Prime Rib( preferably 4+ lbs)
